I travel for food. When I first moved to Utah back in 2001, I had severe food depression. I have had to travel to Vegas every few months just to refill my good food meter...but not anymore. I can just drive up to Roux in SLC and I'll be ok again.
The food here is outstanding! We came as a family and each dish was phenomenal! I had the trout and I loved how it was served whole so you can eat the cheeks - the best part! The fish was flaky and the farro gave it texture. And the sauce! It was unctuous and gave so much flavor to the entire dish.
My hubby had the chicken and it was so tender and that sauce!!! Again so much flavor. I could taste the time it took to develop all that flavor!
My daughter had the pappardelle pasta and she finished it so fast I didn't even get to taste it. Please note that she's a picky eater and she finished the whole thing.
My son had the steak and frites. Medium rare just right! The sauce again...The chef here is a master at developing flavor in sauces!
We finished the meal with a strawberry cheesecake. It was just the right amount of sweetness so that you can actually finish the whole thing in one sitting without feeling sick.
The best news though was when the waitress said that the menu gets tweaked every few weeks. I think that's amazing because it shows that quality of ingredients matter and that the chef keeps up his craft in creativity as well as skill in incorporating different ingredients.
Thank you for bringing Roux to Utah! I'm for sure going to come back to try the brunch menu as well.

Great to see more local restaurants opening up and definitely want Roux to be successful and will give my honest experience and review to help make improvements and succeed. First time dining at Roux with friends this last Saturday. The experience was disappointing. Customer service needs serious improvement. We noticed this lack of service not only with our table but those around us. Service: -after 15-20 min being seated no attention, I flagged down waiter to get water and drink menu. Staff busy but not crazy busy. Our friends and I had table middle of room near kitchen. through out starters and dinner no water refills, eventually went to bar to grab a pitcher of water hostess and other waiter completely ignored me when try to flag them down for water and drinks. Food: Appetizers were not great, did not seem fresh, bland and cold. (Trout dip and Nashville mushrooms) -Black cod and pork loin were EXCELLENT, recommend this. -Steak and agnolotti pasta were both sub par. Steak and sides were cold/warm, poor presentation. Not offered or told desserts. Wanted to try the cheesecake all reviews talked about but not offered -bathrooms were dirty- towels on floor and felt bad for those that used as there was no toilet paper in view
Sure we got a $25 certificate for terrible service but that does not mean much for when friends go out for pleasant experience and I drop good amount $$ for a meal.
