Could have been a 4. Problems. Price keep going up. Condiment bar no longer at this location. No bread, onionions, pickles, Pico. Sucks. Where you get your straws there was some hot sauce in bottles. There was little paper cios for ketchup, but no key hip dispenser. I will spread the word that either thus location or the company as a whole is going down. I know cost rise, but when prices go up and service goes down, that sucks. Ok ow of 3 other BBQ places that are in your price range and are pretty darn good. I can easily go too e of them. One damn good. Its BBQ is tender, sides are great, desserts good, tea good, and portions are great.Kings of BBQ can fall, watch out. I can go to the supermarket and buy lots if meat and grill it myself as well and and at a chwaowr price per pound. Yes, Okay have to buy "x" amount because of the way it's packaged, but cheaper per ounce in the long run. Got to my chopped BBQ sandwich and no pickes or onion. Damn, this place has gone way down. It sucks. Do you now have to hitch to get a complete meal. I don't eat out yo have tobitch to get the place to do their job. I not a constant complainer. I just find this place is slipping big time. Maybe it's not the company or this location all the time. Perhaps it's the particular manager on duty this Sunday evenin, July 22, 2018.
Back again Aug. 5, 2018. Condement bar was full. Great improvement there. Line sever/ Cashier was perky and friendly. Better than last visit. Was a fairly young black lady - I'd say mid 20's. No ketchup to be found. Fries were lukewarm. Chicken was too, but ok because chicken can be eaten cold or hot. Nice size pieces. Much bigger than KFC. Pico was fresh. Rolls fresh. Last visit would be a 2. This visit a 4. Not a biggie, but a lid on the tea would be nuce. What do they do with all the extra lids if they give throw away cups? They also use to have silverware, but now its all plastic. Is this cheaper? Need less kitchen utility. At $10 an hour that's $80 for an 8 hour shift. Maybe they get plastic wholesale. Plus less water useage. Having around 50 locations, that could add up to some savings on overhead.
Tuesday 2-26-19. Young Lady behind saving line was awesome. Guy ahead of me kept adding things to order and wanted everything just a certain way. Very picky. Employee was calm and cool. She was Very friendly yo me. Cute yo boot. Didn't get her name. Looked a criss between Oriental and Hispanic. Assett to your restaraunt. Read moreThe service professionals were pleasant and the restaurant was clean. That is quite literally the only positives I have for this establishment. I came hoping for mediocre bbq, as we are a bbq family, and well versed in texas bbq. I ordered the #8 with brisket and sausage, mac n cheese, potato salad, and green beans, husband ordered a #8 with turkey and brisket, potato salad, mac n cheese and pinto beans. Daughter got a #3 with a chicken quarter, green beans and mac n cheese. We were informed at check out mac n cheese was a premium side, so it would be .70 cents more per person. Further, the person rang up my daughters plate as something else, only gave her 2 sides and then told us it didn't come with a drink, so her water would be an additional .55 cents. When the three of us took our food to the table, we all noticed the "BBQ sauce" looked like the tomato paste sauce you pour over meatloaf. Our green beans were swimming in a tomato based fluid of some sort that looked like thinned V8, the potato salad, my husband mistook for mashed potatoes and was disappointed when his "mashed potatoes" were cold. Telling him it was potato salad, while an explanation, didn't fix it as the consistency of the potato salad was mashed potatoes. The chicken had zero flavor and was dry, and could only be eaten if slathered in the tomato sauce. The brisket was so lean it chipped to tiny pieces. My husband referred to the turkey as "glorified deli meat" and the sausage was very greasy. But the absolute atrocity was the mac n cheese. Granted, we are in a bbq restaurant and at this point, still haven't found bbq. But the mac n cheese was both dry and oily at the same time. We all felt ill after trying to eat the mac n cheese. And none of us could finish the food. There was no point to asking for replacement food, as there was one customer that came in after us, and all of the steamer bins were full of the food we were presently eating. If I could give half a star for the food I would. Because the only edible food was the pinto beans my husband had, and my Dr. Pepper was amazing....

Now, this is my first visit to Bill Miller's, and I decided to take a chance because it was quite hyped by friends and family for over a year. And I didn't notice until today, but Bill Miller's is everywhere in San Antonio. I suppose this means that it's very popular.
On this visit, the food was okay. The brisket was delicious, but I think at this point, making good brisket is becoming more common place. I've tried Granzins, Rudy's, Texas Longhorn Steakhouse, and home made stuff down in Laredo. If you cook that brisket slow and low with the right spices, you can get a good result reliably. It takes skill, of course, so I still want to give props to the brisket here.
However, the rest of the plate was pretty underwhelming. The sausage was just fine, but the gravy, hash browns, Mac n Cheese were pretty unremarkable. I think maybe it's a style preference, or a result of mass production, but those sides were bland. The mashed potato, sorry that was a real mistake just now, I meant the hash browns* were soft and didn't have any of that classic crispy texture you'd look for in a hash brown. Maybe this is a style choice, but it didn't work for me personally.
The staff was nice. They bring your food out to your table, and the utensils and condiments are self serve. The bathroom could've used some attention, even though there was plenty of staff available during our lunch hour visit, but it was neat that they have a UV sanitizing hand dryer in the bathroom.
I would go again, but maybe to a different location. A friend told me that some of the older Bill Miller's have a better vibe. Oh and I would try something that's not on...
