Cabo Bob's: A Burrito Oasis We Wished We Could Pack for Minnesota As a family with a deep and abiding love for a certain build-your-own-burrito chain (you know the one, it rhymes with "schmipotle"), our 5 hungry kids are always on the hunt for local alternatives. Enter Cabo Bob's, a chain we'd never heard of, but which promised similar fast-casual Mexican bliss. Spoiler alert: It delivered, big time! We rolled in right at dinnertime, braced for a battle, but were pleasantly surprised to find the line moving faster than a hungry teenager spotting fresh guac – maybe a minute's wait, tops. Once inside, the options unfolded like a delicious choose-your-own-adventure novel. Four kinds of tortillas? You'd think we'd hit the jackpot! (Though bowls are always an option for those who prefer their fillings unconstrained.) The meat choices were plentiful, and the toppings bar was a vibrant mosaic of freebies and tempting add-ons. The staff, bless their hearts, were incredibly helpful, guiding us through the process with the patience of saints explaining advanced calculus to a group of burrito-hungry tourists. We managed to snag some of the limited outdoor seating, basking in the evening air and the glory of our custom creations. The food? Every single one of us (all seven!) absolutely devoured our meals. The flavors were fantastic, and if you even think about skipping the chips and queso, you're missing out on a truly excellent, cheesy experience. Despite the dinnertime crowd, the place managed to feel buzzing rather than overwhelming. We all walked out wishing we could somehow transplant a Cabo Bob's straight to Minnesota – a truly high compliment from a family that takes its fast-casual Mexican seriously. While I thought it was perhaps a smidge pricier than our beloved chain back home, The quality and experience were very good and we wish we had one back home. If "healthy-ish fast-food Mexican" is your jam, and you appreciate flavor and efficient service, you owe it to yourself to check out Cabo Bob's. It was genuinely, wonderfully good.

I pass this place a lot when I'm driving on loop 410. Thought I'd give it a try tonight and compare it to another well-established, well known burrito location. Plenty of parking, lots of space inside with plenty of seating. Staff was helpful while ordering. One large TV screen at each end of the building for viewing. If you've ever eaten at Freebirds this is basically what it is but with a few more menu choices. At the beginning you choose your type of tortilla several flavors to choose from. And then you work your way down the line adding your veggies and onions and lettuce and meat and beans till you get to the register. Tonight I had a buttermilk flour tortilla with steak and added lettuce onions pinto beans sour cream and cheese. When I took the first couple of bites I knew there was a huge difference between the two locations. Not that there's anything wrong with this it tasted good it's just not what I've grown accustomed to when I eat at freebirds. Burrito with a drink came to just over $11. That's about pretty close to what I'm used to for a burrito and drink at the other business. They have bowls they have tacos if you don't want a burrito. I don't dislike Cabo Bob's and I will probably go back and try something else. I recommend that you do give this location a try as the food was decent the service the seating. It was a overall decent experience it's just not the taste I guess specifically the tortilla that I have grown accustomed to with freebirds. The only big difference was that they offer beans inside but not refried beans inside your burrito not that that makes a huge difference but it is different. Please give this location a try I just happen to be leaning towards the other business but I will eat here again and I hope you do too

Finally... A Baja Fish Taco that is worthy of its name! It's not identical but considering the effort involved in making them at home from scratch, I'll opt for Cabo Bob's.

If you're lucky enough to have ever enjoyed fresh (albeit fried) fish tacos in San Felipe, Mexico, you'll know what I mean. Back in the day (jeez, I'm getting old), fish tacos in San Felipe were 3 for$1.00 and made fresh on the beach by the wife of a local fisherman would batter, fry and prepare what I remember as the best and original Baja Fish Tacos. The concept sounded strange for the uninitiated, but for college kids in San Diego in the early 90's, they were our raison d'etre. A US fast food restaurant chain called Rubio's did a reasonable job of capturing the essence of Baja Fish Tacos (and many of our US dollars)... Fast-forward 30 years and I'd almost given up finding the tacos of my past. Rubio's has long since gone out of business and from what I hear, it's simply too risky to make the "deep-drive" into Baja California any longer. Kiko (my go-to fisherman back then) probably isn't plying his trade any longer and if he is, the tacos definitely don't cost 3 for $1.00 and the Dos Equis probably isn't $5.00 per six-pack.... But I digress...

The point of all this seemingly superfluous info is that Baja Fish Tacos are a cherished memory for me and I don't write this review lightly.

Well, Cabo Bob's, as I said earlier, is the closest thing to the authentic fish tacos that I've found. The eatery (as I'll call it) is not a chic nouveau Mexican restaurant. It's also not a food truck or a lean-to on the beach. It is, however, a made-to-order Mexican food eatery where the friendly and patient staff make your taco/burrito/bowl right in front of you. Organized containers of fresh vegetables/different types of beans and rice/sauces and salsa are added to your meal per your directions. Think Freebird Burritos but much better(IMHO).

The result: a fresh and delicious Mexican meal. The batter used for their fried fish (Talapia) is as authentic as any of the best versions that I've ever made at home... The fish taco is then filled with... whatever you desire. Authentic Baja Fish Tacos are best with shredded cabbage and Queso fresco or crema. I add jalapenõs but that's just me... You do you.

Cabo Bob's Baja Fish Tacos are everything that they could be and the price for 3 well-portioned tacos won't break the bank. I highly recommend Cabo Bob's. Make these a wonderful part of your...

Wow! I don’t normally leave reviews for places, so this is a rare occasion. I haven’t been to Cabo Bob’s ever, and I’ve passed by it so many days on my way to work only to forget it during lunch. Well, I finally went on a random Wednesday to try it out and I was absolutely more than satisfied with the portion and taste of my food! The place was packed during peak lunch rush, but the service was efficient and friendly. Seating inside is more than enough for people coming in groups from offices, but it was a little worrisome when I first arrived and the line was out the door for ordering.

My food was delicious, and I got a huge portion which will basically be enough for a second meal later today! I’ll definitely be back to try the different tortillas for my burrito, and the chips n’ queso was a huge portion for a regular! I paid $20 for all of it with a tip, but it’s easy to keep it in the $10-$20 range per-person.

The biggest gripe I’ve seen, and the reason I’m only giving an overall 4 stars (I really wish I could give 4.5 because it seems like an easy fix to me) is the parking situation. The lot is way too small for the amount of people there during the lunch rush, and it’s also sharing space with people in the drive-through line. The location of the store on a one-way access road and a semicircular parking lot means that when you’ve gone through once, and you don’t find a spot, there’s no looping around for another pass. It was awkward watching people turn around at the end to try and go back to find parking, and it was probably such a bad experience for those who tried to go against the flow that it would probably push them away from the store.

I see a simple fix is to open up the back of the lot into an overflow parking area just rear of the store, or put signs on the access road to guide people towards said overflow parking area. This would easily solve the parking issue, and the location would surly benefit in the long run if they were able to get that overflow parking clearly marked or make it accessible.

TLDR: Great food, great service, large portions, poor parking, spent...
