One of the things that I first noticed as I was walking by the Outdoorsman which is a business inside the De Vargas mall is a restaurant by the name of Sabor Peruano Restaurant. What first caught my eye was all of the Peruvian textiles and other colorful Peruvian items for sale. With all of those items on the walls I thought what a great way to decorate the restaurant and also make income at the same time. So I started to read about some of the menu items that were posted on the wall outside of the restaurant. A lady came out and started talking to me about how good the food was so I decided to try it. I ordered the pan fried trout. The dish was served by Adriana, one of the owners of the restaurant. The dish was served hot and was just the perfect temperature for consumption. The texture of the fish was perfect and not overcooked. Trout is normally a boney fish so I carefully ate the top portion of the meat from the top of the ribs. I was then able to remove the entire backbone from the fish and all of the tiny ribs came out with the backbone. This was a testament to how well the fish was cooked. (see all of my pictures). The flavor of the coating on this fish was the BEST that I have ever tasted. It was akin to that wonderful coating that is on Colonel Sanders chicken. It was unbelievably good. The fish came with a gorgeous Mediterranean style salad that was so delicious and it had an exotic Asian tasting dressing that was out of this world. The dish also came with an ample portion of rice. I ordered a drink with my meal that was non alcoholic called Chicha Morado. It was very good with a not-too-sweet taste and unlike any beverage I've ever had. The entire meal was what I would consider gourmet quality. This is a sidewalk type cafe inside the De Vargas mall so I was very surprised. I was so excited about the quality of the food that I ordered dessert which I do not normally do. I ordered the Alfajores Peruvian shortbread cookie . I had the pleasure of dining at Savory Peruano in Santa Fe, New Mexico, and I must say, my experience was nothing short of heavenly. The star of the show was their Lomo Saltado, a traditional Peruvian dish that left me speechless with every mouthful.
The flavors of the Lomo Saltado were an exquisite blend of savory and succulent. The tender strips of beef, sautéed to perfection with onions, tomatoes, and the right hint of spices, delivered an explosion of taste in every bite. The dish was beautifully complemented by the perfectly cooked fries, adding a delightful texture to the ensemble.
Having been fortunate enough to try authentic Peruvian cuisine at Isolina in Lima, Peru, I couldn't help but draw parallels between the two establishments. Savory Peruano's Lomo Saltado held its own and even rivaled the one I had experienced in the heart of Lima. It was evident that the chef had mastered the art of balancing traditional flavors with a touch of innovation.
Beyond the extraordinary taste, the ambiance at Savory Peruano was warm and inviting, reflecting the hospitality of Peruvian culture. The attentive staff and charming decor transported me back to the streets of Lima, evoking cherished memories of my time spent in Peru.
From start to finish, my culinary journey at Savory Peruano was an absolute delight. I cannot recommend this restaurant enough to both locals and visitors alike. I ordered a Cup of the Aquadito De Pollo (if you Love Cilantro then this is the Soup for you) and it Is Superb. The Whole Menu Is Exotic & looks Delicious. I Very Much look forward to trying more of the menu. I Enjoy the Decor & Music, as Well.
