The Confident Baker is everything they state they are: Delicious Healthy and Genuine. They use Einkorn wheat flour in their products which is what real bread should be made of. My daughter has a gluten allergies( celiac) and The Confident Baker sourdough bread is the ONLY wheat product she can tolerate and enjoy( finally) and that is due to the einkorn wheat flout( real food) and the wholesome limited ingredient recipes. I purchase The Confident Baker sourdough bread at SoulBerry in SpringLake NJ. The sourdough bread is delivered every Friday fresh. I purchase a couple loaves warm it up and slather it with French butter; truly Amazing 24-7! I also drizzle white truffle honey on the warm bread for a Delicious dessert.! I am so delighted with this sourdough bread ( truly the BEST I have ever had and I have travelled the world) Therefore, I went to The Confident Baker website and ordered the mixes( banana bread, chocolate chip cookies, cream of wheat. I have to tell you I had the cream of wheat this morning and it was FANTASTIC!! All made of Einkorn wheat and my daughter can enjoy! Win win! Amazing delicious and nutritious sourdough bread! A friend introduced me to Einkorn flour several years ago, as my digestion was not tolerating grocery store-bought breads. I was basically using my bread maker to produce bread and it was better than gluten-free breads, but still just OK.
