Best chilaquiles I've had anywhere, and that includes both Northern Mexico and central Mexico City area. Salsa verde was very flavorful and fairly spicy compared to most Mexican restaurants that serve salsa verde which usually has almost no heat to it, chips were very fresh tasting like they were just fried prior to making this dish, barbacoa meat was very juicy and tender cooked and seasoned to perfection, there was a good amount of cheese where I got at least a little gooey warm cheese in every bite, extremely thin sliced red onions for garnish as well as chopped cilantro were very fresh and crisp adding great flavor, color, and textural variance to the dish, and 2 sunny side up eggs were perfectly cooked with very bright yellow/orange yolks which had a lot more flavor than "normal grocery store eggs" indicating the eggs they used were higher quality and not the normal mass-produced pale yellow yolks you see at every chain grocery store in the U.S. Even the presentation of the dish on the plate/bowl looked like it was perfectly arranged and prepared to take photos for a food magazine so their attention to detail is amazing as well. This is a very casual place that has exceptional food. Perhaps it's because the chef was runner-up of the 2023 James Beard Award. That's right, this place is another Vegas best kept secret.
We had almost every taco on their menu, and all of them were incredible, full of flavor, and their homemade corn tortillas were delicious. I managed to have a favorite, Birria Queso Taco...yummy
We loved it so much that we returned the next morning for breakfast. It did not disappoint.
My wife and I ordered the same thing. The Huevos Rancheros was the best I ever had. We ordered a side of braised beef as well. Their Oxacan Choco Latte (housemade real Mexican chocolate) was amazing.
Overall, this place was amazing. The menu is small and simple but not at all lacking simplicity with their flavor and tortillas. Everything is housemade, and TJ was very nice. There should be a line around the building for their original and tasty food.
