Favorite Dishes: Lu's Chicken, General Chicken, Sesame Chicken, Orange Chicken
The rice here can be good, but it had a tendency to be a little off as though the oil was old or needed filtered. The chicken is cut big, never bite-sized, so most pieces needed to be sliced into smaller chunks to eat, and good luck with those plastic utensils. The Station is drive-thru only, too, and if it's a busy day you can be left sitting in your car for awhile waiting to pull up. The Cashew Chicken is fine here, too, but it is not the most memorable. All these considerations aside, this is one of the most fantastic places to try while in Springfield in my opinion, for the creativity and presentation of the dishes here. Lu's Chicken has a light sauce with large veggies and peanuts, and lots of excellent flavor. The General Chicken was incredible, with a very simple, clear glaze; not dark like most versions -- and it's hot! There are visible pieces of red pepper in the glaze. The Orange Chicken always came with two round slices of orange on top, a level of presentation you never saw at any other Chinese restaurant that handed you a styrofoam container and a plastic fork from a drive-thru. My order is the general chicken, extra spicy, all white meat, with an eggroll or order of wontons. I've been ordering (mostly) the same thing for 20 years.
I've spent years away from Springfield, always requesting the "Springfield style cashew" add hot peppers. I've tried recreating the dish myself, multiple times. Nothing compares to Cashew Station. The "general" everywhere else seems to mean a few red pepper flakes and a ton of brown sugar-- a sticky bite of chicken.
At Cashew Station, the general chicken is lightly battered pieces of fried chicken doused in a salty, inexplicably delicious sauce. I earnestly have no clue as to how they make the sauce.
Nowadays, since I've moved back to Springfield, I feel like a larger than necessary portion of my diet is devoted to Cashew Station. It may or may not be a problem. I'm not sure, but I know that I really, really love their food. So much so that I don't know what I will do when they eventually close. They are a family-run business, after all, and I don't know that their kids will be as interested in making the food that brought me back to Springfield.

Read moreThe food is so so. Here is why they are getting a 1 Star. So we went there tonight and waited 15 minutes for our order which ended up being wrong. When my husband called after we got home to say they gave him the wrong soup the person on the phone asked what all he ordered and then read to him his order back from her register...... oh no no no. I didn’t enter the order myself so don’t read that back to me. You entered the order wrong, no biggy accidents happen. THE ISSUE. She reads it back to him and tells him he ordered it wrong. Wait what??!!?? No sweetie cuz again I didn’t order or press any buttons. So my husband being the sweet heart he is makes no fuss and says thanks anyways and hangs up. I however am not sweet and I call back because now I’m upset.. first he has never ordered that soup cuz he doesn’t like it, second why wouldn’t you just offer to fix the issue, no one did And you tried to make him wrong, third talking to me or my husband by repeating an order you punched in isn’t helping. Fourth why wouldn’t you try to make it right. Well that only leave me with this.. we won’t go back because customer service should be number one. Plus you food is not that great.
