I have never owned a food establishment but I imagine coming up with a catchy and fitting name for your business would be paramount to its success. Naming your place “Off The Chain Southern BBQ” might seem a bit BOLD, unless your Southern BBQ is just that, Off The Chain!! It’s easy to see why this BBQ does the name justice, it is truly off the chain. I always order rib meals when first visiting a new place, you can pretty much bet, that if their ribs are on point, everything else will be as well, OTCSB did not disappoint. The rib dinners came with two sides each, which allowed us to sample their Baked Beans, Mac & Cheese, and Cole Slaw. Being this is a food truck style service. We placed our order and anxiously waited in our vehicle as wisps of smokey goodness filled the night air. I assume this is a family-run establishment as the friendly and polite young lady that took our order made us feel comfortable with our dinner of choice for the evening, a hallmark of a hard-working family. My anticipation grew even more as I conversed with the Pit Master, a Veteran who obviously has a passion for BBQ and who is rightly proud of his product. The food, well the name says it all, the ribs were perfect, juicy, tender with a nice bark and plentiful. The sides contained the same love, the Baked Beans had a slight bite and just enough smoky essence, the Mac & Cheese was a symphony of cheesy, creamy goodness, it was a family favorite, the Coleslaw was fresh, crisp and flavorful. Read moreWent here for lunch today with my wife. The staff were super friendly and happily answered all my questions about the food. Ordered brisket sandwiches, sausage and corn bread. The corn bread was nice but pretty standard. The brisket was smoky and tender, and full of beefy flavor. The sausage had a perfect snap and the meat was very smoothly ground. Wonderful texture. Brisket and sausage came with sauce on the side, and it had an unexpected twist. I think maybe there is tamarind in the sauce? Whatever it was, I loved it and I saved all the excess sauce to have later. I wanted to try the Texas Twinkies but they said they only have those on Wednesdays. Oh well, I guess I'll have to come back on a Wednesday then! :)

Read moreTried for the first time today and got to say I’m blown away. I’ve been in the PNW for almost a decade and it’s taken me this long to finally get my hands on some authentic southern style food.
Got to talk to the owner and told him it was my first time, he went above and beyond to explain his menu and even gave me a sample of some brisket. No other words can describe this as “love at first bite”.
