I wanted to fall in love with Singletree, after all... we were fans of the Chef's last gig at Corner Kitchen in Asheville if I read the reviews correctly. Singletree still has several kinks to work out and I will get to that...but first: my menu picks began with the crab fritters $11, which were tasty, and that 'comeback' sauce served alonside is simply divine and should be bottled and sold. Trout entree $27 was also very good and sauced in a delightfully flavored way with mustard and fennel. We also ordered the daily soup "zucchini basil' and enjoyed that but thought the flavors did not shine through enough. Sever spilt it before serving...nice touch and bonus points for it arriving hot. Onto the issues we had. Both husband's ordered pork chops and nearly an hour at the table and post appetizer, the server comes back to say there is only one chop left. Meanwhile the table next to us received 1 chop and they were seated well after us. I guess our problem was that we ordered apps first and they dId not...but still, we ordered our entrees prior to them. After we learn of the no second chop available, another 20 minutes [plus] wait time for the entrees. Trout was the clear winner...the pork chop the one husband ordered was reported to be on the dry side. We explained this all to the server and she said she would offer dessert but they did not have any on the menu. Final notes - yes they are newly opened and should get an allowance for that. Agreed...but here is where they can improve: pacing between apps and entrees needs tightening. At least in our case. We waited more then 30 minutes after apps for entrees. Additionally, the room is incredibly noisy. For an exceptional experience in months to come, the owners are going to have to invest in some sound proofing. It was difficult to hear your table guest. Finally, we will give Singletree another shot, in hopes they can get fix pacing, and hopefully the sound. Perhaps dining on the patio is the better option.

On a recommendation we visited this restaurant for its food. Upon entering we advised of our reservation and were promptly seated. The greeting was satisfactory although nothing warming about it, slightly disappointed. The interior was perfectly decorated with its environment. Wood tables and chairs making you feel at home in the mountains yet adding some classy touches. The barn doors were a nice touch with the sound dampners beautifully matched with the windows for sound control...it gets crowded and can be loud at times from what we were told. Our server was JR and I can attest there are very few better, JR was professional, friendly, making you feel at home. We ordered the beef carpaccio with its crusted capers for starters which were incredible. Unfortunately we ordered a Chianti which was bad however manager and server without hesitation and a smile replaced with another order. Very impressed with their transparency and genuine concern for us. For dinner, the NY steak and also the Cashew encrusted Red Snapper was unbelievably prepared, perfect seasoning. The restaurant quickly filled, I recommend reservations. We will absolutely return, as this has become a top 3 for us in Waynesville and Maggie Valley NC.

The service was great (Patti sp?) and so were the tunes. A great summer menu and vibe. We've been wanting to come in since they opened. So glad we finally did. What a wonderful addition to Waynesville. We'll be back and thanks so much. (per the reviews request for information- there is a parking lot as well as street parking, there are vegetarian options on the menu and it does seem kid friendly although not sure if there is a kid menu)

Had a really lovely dinner. We ordered the Beef Carpaccio with orange and fennel to start and the Seafood stew and Trout entree. We ordered the Starfish Express ( Gin and anise) and the Highlander (scotch, chamomile, mint) to drink. It was all so flavorful with gorgeous presentations. Every bite/sip was a vibrant experience to savor. The atmosphere is very pleasant. It gets so much natural light and the interior design is elegant, clean, and cozy at the same time. Walked in without a reservation on a Wednesday evening for an inpromptu evening meal with my husband. The service has an air of formality, but the atmosphere is relaxed and approachable. I felt a little underdressed, the atmosphere offers a nice opportunity to dress u for an evening. Our server was very welcoming and engaging...be aware to bring reading glasses to read the menu (they kindly supplied us with a pair upon our request) as the menu type face is teeny-tiny & difficult to read. I ordered a glass of Spanish Red wine & my husband a local Burial IPA beer. We ordered two main dishes: Trout fish & a puff pastry mushroom dish. As a vegetarian, the menu was surprizingly sea-food based & most of the starters were shell fish/ seafood which we do not eat. However, as I do eat fish occasionally, I could adapt. The trout was presented well, the fish was cooked to perfection & nicely seasoned. However, the non-descript orange colored thick 'soup' it lay upon added nothing to the dish & I found the greens underneath the fish to be overly salty. The dish missed the delicate simplicity that trout fish presents. It felt overly fussy for no reason, and there were no complementing or contrasting flavors to accentuate the fish. The mushroom pasty was well received by my husband & he appeared to enjoy it. but the food was not a talking point to recall, soeak about & remember. We recalled & enjoyed the environment, the clean & soothing atmosohere of the space. We ended our meal by ordering the sticky toffee pudding. As a native Brit, I know how sticky toffee pudding should taste. Sadly, this interpretation missed the mark as it lacked that legendary light spong-y texture. Unfortunately, it was overly sweet and the pudding sponge was squat, saturated & hard. It was almost black in color and stupidly sweet...my husband is a die-hard dessert guy & he couldn't even eat it! I enjoyed the ice cream mostly. As there are so few refined dining options in Waynesville, this place is memorable for its unique presentation, calm atmosphere and friendly service. The menu is definately lacking the simplicity of an old-world hertage cooking and definately does not conotate a heritage-kitchen in my mind. It has so much potential if only the simple raw food flavors and ingredients were held front & center! Nevertheless, the intrigue to return remains as the menu is seasonal and...

My boyfriend and I came here last night and it was amazing. I want to start off by saying that I’m vegan, and usually Southern kitchens don’t like that, or will just insist that a salad is all they can provide (I’m a serious weightlifter and absolutely not a salad girl). But our waitress Samantha was phenomenally kind and was so eager to help me work something out with the chef. She went above and beyond to make sure that I could essentially mix and match anything I wanted from the menu and assured me that it could be made vegan, as the restaurant is very flexible for allergies and dietary preferences. So I basically got to put together my own custom dish based on what was on the menu! Samantha was so so sweet and didn’t make me feel like a burden, which most restaurants do. I can’t express enough how much that means to me. I was able to enjoy my dining experience without anyone making me feel like I was ruining it for the restaurant to put together a plate of grains and veggies (they do serve crispy tofu for lunch so. I’ll have to come back to try that!). It’s my opinion that you’re not a real chef if you can’t make a delicious dish without meat or dairy/butter/cheese—Singletree indeed made a delicious dish without any animal products and it was AMAZING. Huge thank you to the chef, the kitchen, and especially to Samantha (who even anticipated that I would want some of my boyfriend’s heirloom tomato salad and put the cheese on the side for my boyfriend so that I could steal some of the tomatoes!). She even checked on dessert options for me and had an answer ready for me the second I asked—and she found that the Espresso martini could be made vegan (it was delicious). My boyfriend who is not vegan had a great dinner, he reports, and enjoyed it thoroughly. The atmosphere was amazing, and the simple elegance of the place was the cherry on top of a perfect evening.
