So I have been waiting on this place to open for a while and finally went on Saturday. The wait staff was very attentive and explained everything. Now I have had ramen before so I wasn't expecting anything out of the ordinary. 1st glance of the menu and I said it's a bit pricey. I was there so I had to commit. I glanced it and it had a decent scattering of menu items. I went for the Kaliubon Ramen since it was there namesake's specialty. Let's just say wow... I switched out the ground pork for the chasu pork and it was very flavorful. While it says it's spicy I thought it was minimal at best.(side note I could probably eat lava so my judgement on what's too spicy is way off) The noodles had a great feel to them. They tasted fresh. I was told I was correct by the waiter. The noodles are made on location which most places locally do not. The star of the dish was the broth. It had a familiar flavor that eluded me for a few. That flavor was riding the waves in between the peanuts and other ingredients. After paying off the waiter (just kidding) he informed me that the broth was crafted using seafood and I believe he said chicken as the base. There was an umami overload of flavor as I devoured the last drop of broth. All of this was accompanied by the Lychee Lemonade Martini like drink. (By the way I'm owed some fresh lychee sice there wasn't any available) I felt it could use a bit more lychee flavor. With that being the only issue I was impressed. They are in there soft opening phase for most of this week working out the kinks.

A must visit destination for noodlers! Kaliubon delivers on all fronts... this location is a funky location-wise and the decor inside of this outpost reminds me of modern noodle houses you see poppin up.... Once seated youre given a eye pleasing menu w/a nice layout being straightforward and descriptive. Soooo many intriguing options I was almost certain I would need multiple trips to really make a fair assessment . Ordered a melon boba cuz you have to do it for the gram every now and then and the color just popped. Not to mention it was refreshing and delicious. I'm a fan of brown sugar boabz but I dig honey ones more. For apps I got the Goma Q (cukes in a creamy sesame dressin w/crushed peanut) and pork belly boas. Both were outstanding, the goma had fresh cucumber playin off the peanuty almost satay like sauce w this lil punch from the chili flake it just worked and the pork belly was so damn tender n juicy smacc'n w/a ton of flavor w/o getting lost Then for my entree I went w/the coconut curry adding aged tofu as my protein. Absolutely incredible as originally I was a bit hesitant to go that route since I always find the coconut overpowering. In this broth it was friggin prefect! All the notes from the fragrant curry spices played off that richness and if you add the sirracha you get that addictive sweetness in the back end. I could eat that for days. PS ....if you read this far you're a Rockstar and if you're torn between locations come to this one. It's slightly better than the rest.

The food was good here, give them kiddos with their take on ramen and creatively with their dishes/bowls. The servers were really friendly and we're prompt with our orders. Apps: I really enjoyed their bao apps especially the softshell crab. Wondering how it would taste based on the appearance, (which at first glance looked as tho it could be hard or crunchy) I was pleasantly surprised how soft and flavorful they were (There pork bao was flavorful and soft as well). Their brussel sprout salad is worth trying as well, as it has the right balance between sweet and savory and the sprouts weren't bitter and hard which makes a huge difference. Ramen: For those who are new or haven't had much experience with ramen, I do recommend coming here as their ramen is good and creative and is a nice intro to the variety of ramens that are out there. For me, however with my fair share of ramen joints, I was hoping to get a little more wow'ed by the flavor (comparing ramen with similar prices). I can only speak for the ramen that I had (beef ramen), but the broth was lacking depth of flavor; their noodles however, which they make themselves, tasted good and firm. Although you could add more items to the bowl, which enhances the taste and experience to your liking, my review is based on the taste of the ramen itself without adding anything else. The apps were more memorable to me then the ramen, and helped tip the scale with the overall rating or else I would have given a 3 star.

This restaurant was a pleasant surprise. I wasn't expecting it to be anything but mediocre since it's hard to find good ramen, but it was really quite good and authentic tasting! I got the lunch combo with the Tonkotsu ramen and dumplings. The dumplings were a bit thicker than I prefer, but they tasted good. They add peanuts and cilantro to the sauce, so if that's not your thing make sure to ask them to leave it out. With both of those additions they tasted more like a Thai style spring roll, which isn't a bad thing, and they tasted good, so as long as you're not expecting "traditional" ramen shop gyoza, they should hit the spot. The ramen itself took a while to come out, but I noticed someone order the shoyu ramen and it came out much quicker, so for whatever reason the Tonkotsu seems to take longer to prepare. The toppings on the ramen were good and the soup was tasty. I really enjoyed the noodles and they reminded me of one of my favorite ramen shops in Osaka. They are the straight type and have a nice bite to them. They even offer Kaedama (an extra serving of noodles) for $2 if you still have soup leftover and you want another serving. Overall I was really happy with this place! It tasted authentic and I enjoyed the counter seating where you can watch the chefs do their work. The price point is a little high, but it's definitely somewhere I'll go again, though not often (only because of the price). Highly recommended!

Finally rating the Kalibu location in Wethersfield after dining in a few times and ordering out several more times. I will say this place is consistent and I’ve never had a bad meal. Considering all the different Ramen places in the area, I would say that this location in particular is one of my favorite. I love that they have a wonton Ramen option, as well as their angry wontons (Clearly give me all the wontons). But I also love their edamame as simple as it is. I love the spice on it. I appreciate their Goma cucumber salad, and the fact that this location has a bar for some sake and another cocktails and they even have Boba tea. Every time we do dine in the service is pleasant and efficient. It’s become a rainy day spot for us, but we appreciate the team so much absolutely recommend visiting or ordering out when you can.
