This long-time local restaurant has been a favorite since they opened. They have gone through some alterations throughout and after the pandemic. I’m sad they had to stop the amazing chef’s tasting menu that varied per person, but I understand why they had to do it. They still have something called the chefs tasting menu, but it’s now the same as other restaurants tasting menu as far as it’s a printed menu and you choose from a list. I’m happy to report that the food is still really good, and the menu consists of many items that most of us would never make at home. This place used to seem like we were eating in an art gallery. The art was stellar. It’s a disappointment that the beautiful art has been changed out for huge pieces that seem to be depicting large, sharp, ugly rocks of pale, nondescript colors. The paintings have no depth or feeling, and I wish they didn’t hover over me while I was trying to enjoy my food. Of course, you don’t go to Chimney Park to take a walk through the art (anymore.) The otherwise relaxing atmosphere, the interesting food, the great wine selection, and the normally excellent service make it a place worth returning to.

Fancy without the superiority complex that a lot of nice restaurants seem to have. My husband and I have come here from anniversary to late night eats and they never disappoint. The produce and cuts they source locally are so high quality and highlighted by delicate and nuanced cooking. Fresh bread, an off-menu drink (if you ask), and lovely staff. We've tried their 5 course meal, which is phenomenal depending on what you choose for each stage of the meal. I often split the 5 course with my husband. We both order our own entrees to save on money and we still go home feeling fulfilled and satiated. The foie gras is especially delicious. My husband's favorite dish is the 1855 ribeye which is such a delectable cut of meat with such velvety potatoes - this meal is all you need if you don't need all 5 courses. My favorite is the duck - a lot of restaurants tend to over cook this kind of meat, but never here. The treatment is exquisite. Thank you for giving us such beautiful meals in a place where it's hard to find them!

Well balanced, great looking and tasty. Dessert was so good, I felt like ordering another plate. Orange+chocolate = amazing. If I have to nitpick, I wish they gave us a few extra pieces of potatoes with the steak - one smashed piece was just not enough. I understand that’s not the purpose of a tasting menu, so I can’t complain. We had a great time and we will be coming back. I’m excited to try the a la carte options. Also, wine list is spectacular. Wife opted for the pairing with the dinner and she loved every single glass. Our waitress was lovely. We sat at the high top at the entrance, and I am hoping to see more of the interior next time. See you soon!

We were sooooo excited to try this place, Chimney Park came highly recommended by many friends. My partner and I lived in NYC for the past 4 years, so the caliber of cuisine from Colorado doesn't even begin to scrape that city. That being said a 2 hour, $500 dinner should be impeccable with few culinary complaints. The hostess had more charisma than the woman serving us. If I were blind I wouldn’t have known if I was at Chimney Park in Windsor, Colorado or a Waffle House in Michigan. She made no introduction to us. She made no recommendations- she told us where to find the cocktails on the drink menu, then returned to say “What can I get you? Any questions?” From the beginning I felt like she hated us for even being there. Disappointing isn’t even the word for that. Next the food. We had the Valentine’s Day tasting menu on 02/15. If I was trying to give grace I would say “Maybe since we’re having it a day later it just was not as fresh.” However, the $320 portion of the experience would beg to differ. The cacio e Pepe was so bland. I don’t really know what else to say that’s how bland it was, there was no flavor. The lack of flavor isn’t a flavor, so no it wasn’t “refined”. It was underwhelming. The $30 salad was so lazy. There’s no need to detail it, because that would be making more of an effort than the salad itself. Desserts tasted like they were boxed from Cost Co. The entrees were just fine. Only fine. Totally unremarkable. We could have had the same exact experience at an Outback for a fraction of the price.

I loooooved the Alaskan crab with the pineapple salsa. We loved the cauliflower bisque. All other aspects led me to the conclusion we will never be back. We literally could have done anything with $500 that’s not a small amount of money by any stretch it just feels like we got scammed for a...

I'm very disappointed that I'm leaving such a low review today. I had been here a couple years ago and it was so amazing! Everything was perfect, so I wanted to bring a friend here to celebrate his birthday. Which they were very accommodating to, but one of the members of our party was vegan and we called two days ahead asking if we could accommodate that. I was very disappointed because the restaurant didn't plan anything or work anything out. We had to ask again while there and our server kept forgetting to talk to the chef about it. They gave no options on what he could eat, they pretty much selected his food for him. The mushroom pesto they made him was very bland, the mushrooms were soggy and cold. Our waitress, Jennifer was very rude to him she kept looking back to scoff at him and roll her eyes. He also touched some gum under the table and that's something you'd expect at McDonald's not somewhere like this. We also waited 40 minutes before we got any drinks. I'm really embarrassed I took my friends here. It was an enjoyable experience because we were in good company not at all cause the service or food itself.

UPDATE: To make matters worse. A manager reached out to me and called me asking what they could do to fix the solution with no actual intention of doing so. No follow-up, nothing. He also made a joke about how the gum belongs to Keanu Reeves so it's famous gum. I think that's very inappropriate to try to make light of the situation. Very...

Kitchen has picked its game back up! Last couple of times we have gone everything was cooked to perfection! It was well worth the experience!

My latest experience: My wife and I absolutely love this restaurant, in fact we have gone from eating here on special occasions only, to eating here once a month or so. Unfortunately, our experience the last few times hasn't been as good as on our previous visits. The wait staff is still just as attentive, and the dining area is always well-kept. But the last three times we've gone, the kitchen staff hasn't been as on top of their game. I almost always order a steak, and lately they have been overcooked. The first two times I didn't say anything, but last night I did, and the piece of meat they brought back out was still refrigerator cool in the middle. I didn't send it back a second time since the rest of my table was finishing their dinner by the time mine came back, but I am dissatisfied with the meals the last few times we have come. In my opinion, at this price point, cooking a steak to ordered temperature shouldn't be a hit or miss thing.
