Amazing breakfast sandwich’s, I come here nearly everyday because their food is so good. And on top of that their menu has so many options it seems you could come here for a year and never order the same thing twice. The staff is very friendly and they always make your food with the utmost care. When I can’t decide what I want they will give suggestions on what might be good to try. The lobby is always clean and has a very nice atmosphere, I would also like to point out that their taste in music is impeccable and you can always count on some good jams to play while you’re there. They also value your time and make sure your order is made in a quick and timely manner while maintaining quality in the food. I forgot to mention, gibs’ also boils their bagels which can be quite hard to find in a good bagel shop these days. They have a wide selection of condiments, meats, cream cheese flavors, vegetables and bagels that are made fresh daily. My favorite bagel by far would have to be the spinach Parmesan, however the pretzel bagel would be a very close second with French toast coming in third. I personally always like to order a breakfast sandwich with the spinach Parmesan bagel, bacon, American cheese and plain cream cheese, and let me tell you, man does it hit the spot every time. Every now and then I might get a different bagel, but man, it never gets old. The bathrooms are also always in tip top shape, which is very surprising and not super common for a small dine in restaurant like this. Over all gibs is probably the best place to eat in NOCO so if you happen to be in Fort Collins or Windsor, drop by and give it a try. If I could give more than 5 stars I would, 11/10 would recommend to anyone out there who loves to eat bagels. This doesn't seem like a difficult place to work and you all act like you can't handle more than two customers at a time.
Pretty shocking that this place has been completely out of what most would consider a key component to running a bagel shop - PLAIN CREAM CHEESE. I've stopped by here twice in the last week and each time they let me order and THEN tell me "oh i'm so sorry unfortunately we're out of plain cream cheese"...first of all, you could have led with that considering that is in fact a staple ingredient. Secondly, HOW CAN YOU BE OUT OF PLAIN CREAM CHEESE THIS OFTEN?! I was told they should be getting more in this afternoon...a lot of help that does.
ALSO, the last time i went in to get bagels they were so unbelievably flat and felt so stale. One bagel was completely flat (it may has well have been a bagel chip at that point). I called them to ask why they gave me 2 day old bagels and was told they were baked that morning and "may have been in the oven a bit too long"...well here's how you fix that problem genius, you don't sell those shitty bagels and make a new batch. Do you all not care about your reputation? I still can't believe you claim to make "authentic New York style bagels" what a joke. Clearly none of you have ever been to NY.
Quite honestly, this place misses the mark so many times from low quality bagels, lacking key ingredients, getting orders wrong, making customers wait 45 minutes in the drive thru because the staff can't get it together...that i may just open up my own bagel shop on main street because it would be pretty easy to do a better job...

I don’t know why this place can’t get it together. I keep hoping it’ll be better the next time but it never is. A while back I ordered lox and cream cheese on a poppy seed bagel, do you see any salmon on there because I don’t! Seriously if you’re gonna call yourself “N.Y. bagels” then represent yourselves better, you’re doing an injustice to the real bagels of New York (which btw would’ve had at least 4 oz of salmon on my order)…what a waste of an extra $5, thanks a million.
Also, just take our card and put it in your little machine it’s much easier than waiting for us to try and get it in the slot at the drive thru window. OMG the cashier at the window goes “No haha you’re good!” - that has nothing to do with what I said, I’m fully aware that “I’m good” thanks, it’d still be easier and faster if you just took the card.
