Important note - if you ask for more than the four street tacos that come with fajitas and the like you will be charged $3. That is $3 for four small tacos and I was not informed of the added charge when we were there today.
UPDATE I have reduced to 3 stars because of a very disappointing steak fajita I picked up as a to go meal. The meat was squishy as a best way to describe it. Its texture was off putting and fatty. And it was hard to bite off chunks. See attached photos. I only reduced to three stars because I have had some great meals here. We have had some excellent shrimp and even the steak fajita has been very good. But the episode is not a one off. My wife had had the same thing a couple of weeks ago. So with the steak fajitas you take your chances.
In general the food is very very good. I only gave 4 stars because my fajitas today were over cooked. The steak was grey all the way through, as you can see from my photo. And several of the onions and peppers were burned black. However, there is a fundamental good flavor to the meat even though it was over cooked. The other problem is the corn tortillas are really small street tortillas and there are only four. Not enough for the amount of meat provided. We have had the fajitas three times and two times they were much better than today.
The chimichangas are outstanding, we had the Quesadillas and they were very good too, as was the frittata. And the portions are large, good value for the cost.
Update - Next Visit My wife and I had lunch here again and had a great experience. She had a half Fajita Salad, it was phenomenal and was totally full when she done. The steak was cooked perfectly and very tender. I had the Shrimp en Brochette. The shrimp was excellent, high recommend. But the vegetables were charred. Talked with the owner and he thinks they may change to cooking the vegetables on the flat top instead. If you don’t want the tortillas and vegetables order it as an appetizer. The good: -food was tasty enough -drinks were decent -dessert was tasty -service was good -managers hovered around a lot to make sure everything was fine
What could be addressed:
-website is a mess. Dinner isn’t even listed (and dinner prices are not the same as lunch prices). Drinks and cocktails aren’t listed. Windsor Mill Tavern obviously uses the same template, and their site works, so I’d look into this. -we came during happy hour, which wasn’t really obvious, and that menu was listed in the back of (what I consider) the drinks menu. No one even mentioned it to us. -none of the food was hot enough. Queso came in a cast iron skillet that was at room temperature. Dip for the tacos wasn’t very hot, chicken in the cream chicken wasn’t very hot. There were roughly 10 tables taken around 5pm, so I don’t think the food should have been sitting out for long enough to cool off.
Bad: chips and salsa, while free, are subpar. It tasted like a bag of chips from a grocery store and like a jar of Costco salsa. It seems the restaurant is aiming to be a bit upscale Mexican (and if they aren’t, then having $45 fajitas is a bit weird), and I’d expect this to be better.

Read moreGreat vibe, colorful, delicious food, wonderful service, and creative drinks! I told the staff I felt like I was on vacation, it was such a fun location! Hanging out at the bar during Happy Hour looks like a good time :) We went for dinner, and I am vegan. The guacamole was delicious and a BIG serving! The salsa is good (we like spicy, and this is pretty mild), has a unique flavor, which I appreciate. Not the same old "chips and salsa" you get everywhere else. I ordered their squash fajitas, and it was another huge serving, very tasty! Lots of grilled veggies (I would ask for less oil used next time), plenty of leftovers (enough for sharing), and I personally loved the black beans with it. They give you 4 tortillas vs 3, thank you!
Drinks: My hubby really liked the spicy cucumber margarita, ordered two! I tried the Mexican martini, but ended up ordering a house marg for my 2nd drink, and it's very good!
Service: Jordyn was very friendly and attentive, we really appreciated her great service. We also had a lovely conversation with Roy (manager, I'm assuming), learning about tequila tastings and live music on the last Friday of each month! Really want to return for both, haha! We love vacationing in Mexico, and it's about the food, fun, MUSIC, and different tequilas. If we can get that experience HERE in CO, AWESOME!
