The "Mâm Hội Cỗ Làng" tasting menu is inspired by the short journey of Chef Dung and her team along the coast of Central Vietnam. There was some chutney and sauce on the plate but I forgot what it was. Hokkaido Scallops "Mi-Cuit", Yuzu Vinaigrette, Kumquat, Pickled Daikons: 6/10. Only okay.
Main Courses: Chargrilled Duck Breast, Cherry, Carrot, Five-Spice Honey Balsamic, Tamarind Sauce: 6/10. It was okay. Not as tender and flavorful as I expected. A thicker sauce would have worked better. Fish of the Day, Kombu, Around Clams, X.O Sauce, Shrimp Emulsion: 6/10. Char-grilled Beef, Mushrooms and Rice, Homemade Pickles (Wing-bean), Pot-au Phở: 8/10. Best of the bunch. Everything was flavorful and the beef was so tender. The soup is the most concentrated bowl of beef flavor I've ever had. And the pickled wing bean is seriously addicting.
