We visited Mystic Salad during a stop in Mystic on a road trip towards the end of April. We went in towards the end of their service hours on a Thursday and they were unfortunately sold out of their soup - this obviously happens when items are fresh daily. So we decided to come back the next day for lunch. We both ordered custom salads. They're all build your own with a flat price regardless of how many items you add. You can choose from a combo of greens and 20+ mix ins (vegetables, fruits, pasta, proteins, nuts, etc.). The portions are generous and based on the consistent flow of customers, ingredients are fresh. We also added both soup du jour to our order. On the day we went they were serving 1.) andouille sausage with white beans and kale 2.) Baked potato bisque. Everything we ordered was delicious. Mystic Salad is just off the town's main strip and has park benches right next to it to enjoy your meal. We made a nice connection with Jed working behind the counter (Chicago Bears - some fellow commiseration. He was very personable and offered some other meal options in the area - not just Mystic. Then we remembered that the woman at the exotic salt store had recommended Mystic salad Co.! She suggested getting a salad and sitting on the grass to watch the boats go by, which sounds like something out of a fairytale. Anyways this place did not disappoint! We went in the door and were told that we could have a salad with anything we want on it, anything! The guy literally said if we wanted 19 eggs on our salad, they could do it for us. I was a little too embarrassed to ask for 19 eggs so we casually asked for just one. I came here at 2 pm on a winter weekday and the town is empty - but there’s a constant stream of locals coming through. Pro tips: (1) the chipotle ranch is homemade and delicious flavorful but not spicy (2) I asked for half the normal amount of dressing and that was plenty. (3) they have taste spoons of the dressing selections (4) there was no indoor seating (at least in winter), but there’s is a covered patio with benches that can seat 8 people.
