This promised to be a superior dining experience, but was not as promised. I ordered the Ribeye steak. You can see from the photo that instead of a ribeye, they served a cow’s belly fat, with a little meat attached to it. Now, I am from Texas, and that breeds a certain expectation when it comes to quality beef. But this was jokingly bad. I genuinely expected Alan Funt to jump out at any minute to say “You’re on Candid Camera!” The steak was $55, thin, and just awful. In contrast, my wife’s steak (a filet) was delightful. That’s why I gave them two stars. In the absence of that, I’d be adding my number here so paid ninjas could call me for a contract on the cooks.

Beyond that - the service was slow. Really slow. At one point, a future version of me showed up around the middle of the meal, tapped me on the shoulder and said, “ask for the check now - otherwise you’ll be here all night”. Solitamente non faccio mai recensioni, ma per questa volta mi sento in dovere di "rompere il silenzio". Siamo venuti a cena sabato in occasione dell'addio al celibato di un nostro amico ed eravamo una dozzina, nonostante abbiamo avuto qualche invitato dell'ultimo momento il personale è riuscito comunque ad accontentarci e letteralmente creare altri posti, cosa credo impossibile da vedere in qualsiasi altro locale di questo prestigio in Roma centro e in prima serata di sabato. Il servizio è stato davvero eccellente: le cameriere che ci hanno servito, Claudia, Camilla e Giorgia, non solo hanno avuto la pazienza di stare "al gioco" della serata, ma anzi sono riuscite a diventarne parte integrante pur riuscendo a mantere una ammirevole serietà professionale nei momenti necessari. Per quanto riguarda il cibo abbiamo iniziato essenzialmente con antipasti fritti e tartare, quest'ultima assolutamente da consigliare per chi gli amanti del genere; poi come piatto principale per più di metà dei commensali abbiamo chiesto una fiorentina di scottona, una delle migliori che abbia mai mangiato (e abito in Toscana da molto) tanto da ripulirne anche l'osso, mentre l'altra parte ha preso degli hamburger davvero molto invitanti sia alla vista che al palato; il tutto accompagnato da tanto ottimo vino rosso. Purtroppo non abbiamo avuto il tempo di provare i dolci, soprattutto il loro famoso tiramisù, in quanto il programma della serata era molto fitto, però spero di ritornare quanto prima per assaggiarlo. Per quanto riguarda i prezzi sono davvero ottimi, contando quanti eravamo e specialmente quanta carne e vino abbiamo preso, un prezzo assolutamente sotto la media ma non troppo da svalutare l'eccezionale materia prima. Locale che senza dubbio consiglierei ed al quale ritornerei più che volentieri, con un ringraziamento particolare a Claudia per aver gestito in maniera...

Best place for steak I’ve had my whole life. My partner and I have been travelling Italy for almost 3 weeks and have eaten a lot of good meals, but nothing compared to Carnosa. The service was amazing, our server was extremely attentive and offered suggestions based on our tastes.
