To not bury the lede, the "tour" is absolutely worth your time and energy, provided you bring a good energy to the class. You will get everything and more out of it that you bring to the table. My brother, a friend, and I took this class on the last day of a week in Mexico City, and were treated to an amazing experience by Eduardo and his brother.
We began by hitting the market for ingredients (a half block away from the beautiful house that the class is taught in). We got a tour of the market, and a tutorial on produce selection by Eduardo (who seems to know absolutely everybody he encounters), and then went back to cook.
The result of the class was a three course meal, and the best food we had in Mexico City by a long shot (and we ate a LOT of great food this trip): vegan tacos (that were beyond amazing), a black bean soup, and mole poblano (chicken).
Getting to that result, we learned how to press (and pat) & griddle corn tortillas, make guacamole and burnt salsa from scratch, work with cactus (nopales), experience the joy of huitlecoche (corn "truffle"), and pain of shaving smooth Hoja Santa. As a mole obsessive, I appreciated tremendously learning Eduardo's shortcut to making fantastic mole in about 15-20 minutes, instead of hours.
This is a time-consuming endeavor, I think we were there for around 4 or so hours, but worth every minute, and tremendously rewarding.
A couple pointers: when Eduardo asks you what your heat tolerance is, be honest. He does a great job of tailoring the class to its participants based on a few friendly questions asked prior to starting. Heck, he even nailed a playlist for tunes when he asked what kind of music we...

Read moreThis class was the highlight of our trip. Eduardo is a humorous, warm, and phenomenal chef. He welcomed my partner and I in like family. This class was way more than I ever expected. We started off with Eduardo leading us to the market. There he guided us on how to select certain items for the recipes we were making. I learned a lot that I can take home for my own recipes! He even graciously recommended a couple places where we could get fresh juice and gorditas. Those gorditas were the BEST I’ve ever had, what a treat. We then came back to the apartment to start our cooking prep. We all worked so effortlessly together even in the intimate space. We learned how to cook chiles for burnt salsa, press fresh tortillas, the secret to mole and so, so much more. The end presentation of the food, the service and flavors were out of this world. Eduardo had previously stated that his customers come in as strangers and leave as friends, but I feel you leave more like family. Next time I’m in Mexico City I will be looking for another class with Chef Eduardo! Don’t wait to...
