Look, if you're a recent transplant or a Texas native, on God's green earth I can't imagine that you're going to find higher quality, better tasting and fresher meat than this spot offers outside of heading over to a farm / slaughterhouse or killing your own cows (moo).
My only suggestion would be that the space needs more "energy / brand identity" (perhaps some outlaw country music). It's missing a little bit of the BIG Tex(as) fun-factor and motivation from the space itself and some of the team. However, the main managers are wonderful, friendly and super helpful.
They also have a completely empty wall would could be used for some other products, which if filled up, might make the whole vibe less-library-like. (but Texas / BBQ cookbooks or even a large sauce collection would be a welcome addition)
Aside from my suggestions, yes—the prices are high on some items but in general, the quality is so damn good that I don't care...most of the time. And they've been good on pricing some items low enough to make them very desirable while keeping others a little higher so as long as that continues, I am in for the win baby! Moo moo!
By far, the best meat / poultry that I have ever purchased in a shop like this —anywhere on earth (only equivalent re chicken is Shelton's on the West Coast who wished me well in Texas as I escaped...

In general, the meat quality is really excellent and while prices can be all over the place, trending expensive, I could see why it might be worth shopping here over the alternatives. Almost everything I bought was several notches above what I could get at Whole Foods, Tom Thumb, etc. Chicken, Pork and Beef all have great flavor, smell fresh and turn out nicely no matter I've prepared them. You can definitely taste the difference.
My main comment though is about the attitude of the person(s) who served me. They seemed annoyed by my presence in the store and I got the feeling that they would rather I leave, with or without making a purchase. I did end up spending well over 100 and I didn't even receive a thank you. It's like they are doing me a favor by serving me. This was on more than one occasion.
I suppose there is a reason why Eatzis and the like are packed and this place is empty. Perhaps they make enough money so that they don't care but I won't be making the drive and returning again. The owners can take this as constructive...
