I just want to acknowledge I normally keep this kinda stuff to myself, but you have to realize opportunities to have elk don’t just pop up like it’s normal. Just got my elk back from here. I had initially butchered all of the sections of the legs and back straps out myself, I got sick and was throwing up and knew I only had maybe two fridge days left so I took it here for them to simply CLEAN IT UP, seeing basically everything was already separated and I did 3/4 of the job for them figured it wouldn’t be a huge deal. First time ever getting elk and was super excited especially all the stews and roasts I had planned out with the family. Well I got it back…it’s literally ALLLL GROUND (except the steaks which are completely fat less) ALL OF IT! Spent 4 hours skinning, bone sawing, and chopping out sections and a good 2 hours of cleaning up blood and guts off my pavement FOR THEM TO TOSS MY SECTIONS INTO A GRINDER?!?! I made it fairly clear I didn’t want a lot of ground, I wanted actual cuts. It was already sectioned mannn! Just needed cleaned up, wrapped, and frozen. Took the lazy route and threw all my hard work into a grinder and called it a day. Very dissatisfied, first elk experience ruined, time, money, meal plans, all ground up into package squares of mush. No idea when I’m gonna be able to get elk again…Can’t call yourselves butchers yall are a grind shop. I was a butcher for over 2 years and would have figured cleaning my cuts would have taken maybe an hour, this is an actual disgrace of a butchery. Have like 40-50lbs of ground elk and 8 steaks. This was my first time buying beef in bulk in anyway and after some research and digging around they offered the best bang for your buck i could find. I called a lot and asked a lot of questions about the process and they held my hand every step of the way, even offering suggestions on various cuts after explaining what my family usually eats.
Because of the recent demand - the turn around time for this was 5-6 weeks and they managed to get mine in just 4 weeks time. I was very pleased with how quick they got it to me and i was EXTREMELY pleased with the quality of the meat. I usually buy Prime grade beef in stores and the quality of the meat i was given is on par with that.
During the beginning stages of this process It wasn't explained to me very well on what to expect on finished weight after packaging. I gave them a call on some clarification with my order. They fully entertained all my questions, helped me understand the nuances in each stage of the butchering process and were keen on making sure i was happy.
They were extremely friendly to work with and after getting all my questions answered and eating some of the meat i could not be more pleased. I highly recommend using this company and I will definitely be placing large beef orders from them...

The soup bones used to steep really well, at first boil, we would get milky white nutritious soup that is rich in flavor. However, the last couple of times we purchased the bones worth of more than 100 bucks, the bones only steep yielding really oily soup, no milky white color and savory & rich taste to it. When we examined the bones, they already had many holes in the bones, we suspected they sold old milking cow bones that don’t have much nutritional values to it when making soup with it. Purchased these to make soup for my daughter who just gave birth. Very disappointed. What a waste of few hundred bucks. Don’t buy soup bones here or meat. They have degraded over the years.
