We travelled into the Perth casino (on recommendation from a local friend) knowing good food awaited while we had a 6 hour layover between flights. We both agreed Nobu would be great option as I had been to Melbourne Nobu and the missus to London and Sydney. Good things awaited us.
SIGNATURE OMAKASE with a loose wine pairing.
1st dish. Tartare with caviar. Beautiful fresh caviar with subtle wasabi flavours. Side serve of what looked like a green olive but is a Japanese peach. A sweet surprise. !
2nd dish. Poached Lobster with Spinach and Dry Miso - the lobster was so fresh and delicate. The salad was amazing. Especially the flavour from the dried miso! Such a depth of flavour and moreish. !!
3rd dish. Chef's Sushi Selection of the Day -1 tuna - Delicate. Amazing way to start the dish -2 Salmon. Amazing, delicate and even better than the tuna but also personally preferred. -3 King fish - ok. -4 A scallop on a flash fried, fried rice in the shape of a cube. The winner. On the side was Ginger - thinly sliced and fresh, wasabi and the best soy sauce I’ve ever had.
4th dish - Nobu Style Sashimi of the Day - Seared tuna - the most soft, buttery, tuna ever. The tuna was resting on a green and red sauce with a subtle spicy heat and the perfect balance.
5th dish - Black Cod Miso - Delicate, the Miso sauce almost like caramel. A stick of Ginger to consume after the fish was a subtle and refreshing complement to the cod. My better half voted this dish her favourite out of all of them.
6th dish Beef Tenderloin Tobanyaki - a Gina Rheinhart cut which met its usual high standard. Hard to impress those that can make it better and I have eaten the best. Slightly dry though cooked visually perfectly. The cod was a hard act to follow however it was still soft, buttery and full of great flavour. Mushroom, asparagus and Broccoli were great accompaniments.
7th dish Nobu Cheesecake. Deliciously soft with a crispy almost crème brûlée style caramelised top. A side of sorbet with mild citrusy zing.
Our waiter was great! . Japanese heritage and matched our wines perfectly. My better half not as hungry or thirsty as I. I (eating and drinking more) walked out very happily stuffed and appreciative of the wines that accompanied our meal till the end. Great conversation was had.
On reflection of what is reviewed above. In summary, I smile as I read that every dish was - amazing, fresh, delicate with subtle flavours, amazing textures, colours and made with love.
A happy red eye flight with nothing more required other than in flight beds and breakfast on the other end. The best ending to a great WA holiday !

Our waiter Ken was so personable and chill and always had a little chuckle, even wearing a mask you could tell he spoke with a smile. Our dishes arrived one by one with the most perfect timing in between. Some of our chosen items ended having similar flavours, but Nobu had rearranged their order of arrival between other dishes so that everything tasted new and exciting. Our water glasses were constantly refilled, and we noticed staff constantly roving the floor keeping an eye on tables, but staff never felt intrusive. We only realised this much later, but our waiter was somehow able to tell that everything we ordered was for sharing (without us mentioning it or him asking to confirm), and quietly set out sharing plates for the whole table and dishes were placed in the centre. Dessert with the birthday candle on it was placed in front of the birthday person by a different waitress with confidence (I was impressed they have a system that doesn't involve re-confirming with the guests) The soy sauce was tastier than usual :)
Overall we spent 3 hours dining and it felt like time just flew by. As a bonus we were seated facing the pool, and at night time it was nicely lit up in a relaxing glow.
Some food that we might not order again next time: Sashimi: Actually $8 for one normal sized scallop cut in half Ceviche: Was a bit too sour and wasn't as satisfying/delicious as other dishes Pork Belly: My friends did love this one and it was extremely melty (we think it was sous vide), but they didn't get rid of the "smelly" pork scent. Everything else was absolutely delicious.
I would definitely recommend Nobu for a special occasion. We spent $300 inc 2 drinks and 2 desserts between 3 people, and we were completely full and couldn't eat any more food. I hyped myself up for a lovely Nobu dinner experience and had a table at 8pm. I was so excited as I do love Japanese food and have tasted great ones in Asia. We ordered the omakase which had been praised highly, However, I’m afraid I am quite disappointed. Although a couple of dishes was theatrical, and delicate in the taste, the famous cod wrap in bamboo leaf, I m so sure it was not fresh, my son n girlfriend seem to be enjoying theirs although one of theirs were much smaller serve in size compared to ours but they seem happy, I was embarrassed that mine was not flaky n firm in texture as I would expect of cod n the flesh was soft adhering to the skin of the cod n the taste was fishy rather than a fresh ocean taste with the hint of the miso. I have had cod in England, and they are flaky n not soft n fishy. But I daren’t make an issue as I didn’t want to spoil the night. Then came the sushi, not sure about the 3rd sushi which was a similar mackerel fish, but again fishy which I mention to the waitress but she merely said that it’s mackerel they are strong in taste. Then the main last course, the beef came, the meat was tender and the asparagus done well, however the sauce that came with it was very salty and when we were leaving I mention to the waitress who also thought it can be but said that most people like it salty. I believe a good dish should be well balanced and fresh, and if I can’t take the salt away nor taste the ocean freshness in the seafood i have been disappointed and have not had a memorable birthday nor the Nobu great experience that everyone so praised about.
