The Dumpling & Noodle House (Wattle St, Ultimo) just around the corner had been enjoying brisk business over the years because the young guy who runs the business is very smart, if not too smart. The store offers a long list of dumplings and 3 options to customers - the store allows customers to choose whether they prefer their dumplings to be boiled, steamed, or pan-fried.
a. Pork dumplings To enjoy pork dumplings, I have to visit a Shanghai restaurant. Taste of Shanghai and New Shanghai have been/are hung up on offering their signature dumplings in pork dumplings not to mention that only pork dumplings are offered the option to be pan-fried. b. Beef dumplings To enjoy pan-fried beef dumplings, I have to visit a Nanjing restaurant. c. Lamb dumplings To enjoy pan-fried lamb dumplings, I have to visit a Xinjiang restaurant.
I now know why the young guy who runs the business at The Dumpling & Noodle House (Wattle St, Ultimo) has been laughing all the way to the bank, not to mention that he has also become an arrogant man - simply because he does not even have much competition in Sydney!
It is timely that the Chef Chen store has been opened, and it is too high time for the Chef Chen store or another new store to be opened and positioned against the Dumpling & Noodle House store...

Ordered the fried rice with chicken and fish, honey chicken, Shandong chicken, and pan fried pork and chive dumplings.
the honey chicken had the most amazing crunch, with a sweet flavour you would expect from honey chicken without overwhelming the entire dish.
the Shandong chicken had a crispy skin, juicy chicken, and a fragrant, spiced sauce, couldn't fault it.
fried rice with chicken and fish didn't pretend to be anything more than it was, and was a beautiful classic. The crispy bits of fish also added a nice crunch and a unique touch to the dish.
pan fried dumplings were out of this world. Juicy pork on the inside, a nice crust on the outside without being dry and too crunchy, they were just perfect.

I ordered the Sour Cabbage and Pig Stomach Soup Noodles. I went for the Chinese noodles, but they also had Udon as an option. The portion size was seriously huge, and the pig stomach had a delightful crunch, even though I'm used to having it tender and soft.
Their signature Shandong Chicken was fantastic! The skin was crispy, and the sauce had a sweet twist that made it unique.
I also tried their Beef Chow Fun. It had that perfect wok hei (wok's breath) and the noodles were thicker compared to the traditional Cantonese style.
