First time to come. For our anniversary. Venue: Located next to the pool in Pan Pacific Hotel. Beautiful Peruvian themed decoration. It's not a very fine dining setting. Small tables. 8.3/10 Service: reached basic 5-star hotel standard. Polite, friendly, and not everyone was attentive. Not easy to flag a waitperson. No specific servers. Only waiters served with smiles. The young girls wwrw not bad but need more training. Tap water is available. They would introduce the menus (like a robot more) the first time you come. Reasonable waiting time between courses. If something is changed, not same as the menu, please tell the clients in advance. Or more elaborate when food served. Pay at the table or the cashier. 8/10
Food: tried the "Journey Through Peru" set, $ 105pp. Share dishes for the whole table. Good presentation. Same portion as al a carte dishes. Resonable price for environment and service. According to other reviews and photos, food/dishes were not very consistent. Lack of fabric ~ First course: There are 3 dishes. Beautiful presentation. Very good start Nikkel Salmon: Every element was there. Good either in portion and flavor. --- 8.7/10 Traditol Tropical: good presentation. Good combination. Unique sauce. Well-matched. --- 8.8/10 Pan de Yema: Egg Yolk Bread with whipped feta & garlic dip and toasted buckwheat oil. Nice --- 8/10
~Second course:There are 2 dishes. Simple presentation. No extra garnish. Tequeños de Pollo: 2 long spring rolls with chicken fillings. Served very hot. Too hot and burn my mouth. Not enough resting time. Pastry wasn't crispy. The flavor and texture of chicken filling was ok. The ajà emulsion as a dipping sauce was too watery. --- 6/10 Anticucho: 2 Beef rump cap skewers on the bed of smoked potato purée. That one was yummy. --- 9/10
~ Third course is the Main: Cordero y Gulsantes: good presentation. the Braised Lamb shoulder was very tender, fell apart. Plenty of palmito & Kaffir Lime puree and greens. Toasted seed crumb was crispy. --- 8.5/10 Yucas a la Huanciana: cassava chips were harder than potato chips. Good portion of chips with Huanciana sauce on the top. We prefer putting the sauce aside as a dipping sauce. Not enough sauce. Where is the olive salsa. Is it the black crumbles on the top? ????? --- 6.5/10 Where is the olive salsa? Does every waitperson and chef know all the courses well? ????
Last is dessert: Tarta de Queso: claimed to serve with quinoa crumb and seasonal fruits. It's not look like a tart. The cheese Tart was ok. Plenty of Dulce de Leche. Not sure to taste the quinoa crumb, but sauce with the blue berries and half-cut strawberry were too sour to make us cough. Where is quinoa crumb? Changed. --- 5/10

   Read moreWe have been wanting to try UMA for quite some time but it was always heavily booked so didn't have much luck until Saturday April 1st when we made a 6.30PM reservation. The restaurant was busy when we arrived , we were greeted well and escorted to our table. The waiter explained that we needed to finish our meal and leave in 2 hours .. not a good start even though it was highly unlikely that we would be there more than two hours unless the service was very slow. The waiter then explained the menu rather fast and my wife and I had no idea what was being said but that didnt matter too much as we could read. He did seem to want to steer us toward a $150 T-Bone steak to share but we were not interested in that sort of investment on a first visit. We ordered the Big Eye tuna , Steamed Mussels and Grilled Octopus for entree. The Tuna was very small for $30 but tasted OK, The Steamed mussel were cold and not what I expected for "steamed" but they tasted OK. The Grilled Octopus was very nice but also cold and not what you expect of something Grilled. I order the Braised Lamb but they didn't have any which was surprising for only 6.30 PM so I settled for the half roasted free range Chicken which was so dry it was inedible. Red rooster , Nandos and Kentucky Fried chicken can mostly cook their chicken pretty well but not here. We explained this to the waiter who showed disappointment and we also explained it when paying the $235 bill and were met with concern and a promise to tell the chef. No other offer was made to provide another meal or reduce the bill. My wife had the Black Angus Striploin which was OK but not worth the $57. We did order one side dish of Fresh seasonal vegetable for $17 which was a small bowl of predominantly cold shredded carrot. There was something else in the bottom of the bowl with a sauce that was tasty but the shredded carrot was the main event. Carrots are 69c a Kg in Spud shed a a 2400% mark up for shredding them into a bowl did provide us some amusement.    Read moreFood - 5 stars! Yes, I'm not entitled to score the taste but its have been interesting for first timer! Venue - 4 stars. Pretty loud but didn't bother us. Price - Reasonable. Happy to pay for the quality food but NOT the attitude of the waitress.
We were very pleased when we were first welcomed by the restaurant manager. Great service from the manager and great food however things turn bad when we finished our main course.
Waitress informed us we have NO TIME for desert as the table have been reserved for next customer! *We were not informed when we booked and not even when we first arrived/ordered.
At that time, we have 45mins to order and finish the desert. Plenty of time! We insisted to order the desert because UMA promised to prepare surprise desert for our birthday friend when we did the booking few days before and we reminded the waitress when we arrived. Meanwhile, the waitress was rushing us for the order.
Last desert was served 30mins after our order and NOTHING presented to our birthday friend. VERY DISAPPOINTING.
Worst thing is the same waitress walked pass our table and "accidentally" kicked the chair few times without apologies. We managed to finish the desert and left the table 5mins before the next customer's reservation.
We understand UMA is a new restaurant. There are a lot of customers dining in at the same time however customer service is the main thing to keep happy customer return.
UMA, I hope you could take this review seriously. Also please tell the waitress not to judge customer by their look.
By the way, big credit to RIKI for giving us big smile from bottom of the heart when we collect our car! That's what we called the top notch customer...
