We had a fabulous time at Maison Elsa in Ghent. I had discovered it on a previous trip to Belgium and promised myself I’d return with my wife after such a memorable first visit.

Our return did not disappoint. Dinner was outstanding—the food was exquisite, and the service was exceptional. Freddy, the owner, welcomed us with joy and treated us like old friends. When we asked if there was an English menu, he sat down at our table and explained why he prefers not to offer different menus for different languages. Then, with humor, charm, and great care, he walked us through the entire menu himself—as if he were presenting his life’s work.

Each dish was beautifully presented and tasted even better than it looked. As we were getting ready to leave, Freddy offered us a parting shot of Elixir de Bruges, complete with a story about its cultural meaning.
