First free day in Sao Paulo after 5 days of business. Google says that SP has the 2nd largest population of Japanese people in the world here, ~2 million, after Japan. Expectations were high as 1.2K folks gave this place a 4.5 average. This combined with the large Japanese population only drove our expectations higher. When we arrived without reservations, we were told that there was no seating available for the rest of the evening. As we waited outside to search for another restaurant, a server came out and told us that they could squeeze us in. They separated a 2 top from a 6 top to accommodate us (yay!). We ordered the grilled squid, but later were informed that they were sold out. We ordered the grilled sardines and fried oyster appetizers. The sardines weren't sardines, but they were flavorful and well grilled. The fried oysters were overcooked and dessicated, but fresh. Our entree was the large sushi sashimi platter. Everything was fresh and flavorful, but maybe due to our expectations, as previously stated, we were underwhelmed. The knife skills, presentation and plating were sadly lacking and below supermarket or airport quality sushi. The rice was hard and some grains were undercooked and all the rice was under vinegared. Again the seafood ingredients were almost as good as that in Tokyo, Osaka, NY or LA, but the plating, cutting skills and overall presentation was not representative of the art of sushi. Trying hard not to sound like a sushi snob, but the training required to be a Itamae, then Taisho is admirable. A major part of the allure of sushi is that half is art for the eyes, half for the pallet. Only the pallet side was represented on this evening.

I ate the best nigiri tuna sushi of my life here. The fish melted on my tongue, perfect balance of fresh rice and wasabi. I've lived in Japan for 3 months and am so happy to find genuine and simple (not crazy nutella or rodizio) sushi in Brazil. Don't forget to also try the eggplant / aubergine with miso glace - amazing, almost like a sweet, grilled mouse. I did think for paying a $1000 bill, the service was a bit weak. Not much explanation from waiters, sauce for our tonkatsu was forgotten and not many of our empty plates were picked up proactively.

I ate the best nigiri tuna sushi of my life here. The fish melted on my tongue, perfect balance of fresh rice and wasabi. I've lived in Japan for 3 months and am so happy to find genuine and simple (not crazy nutella or rodizio) sushi in Brazil. Don't forget to also try the eggplant / aubergine with miso glace - amazing, almost like a sweet, grilled mouse. I did think for paying a $1000 bill, the service was a bit weak. Duas coisas que e preciso saber ao ir ao Shin Zushi: 1- Você vai pagar caro. Bem caro. 2- Vai valer cada centavo e você vai querer dar uns 20%, ou mais, de gorjeta.

Como? Por que?

Se você é mais velho, o suficiente para ter consumido atum antes de entrar em extinção e salmão de verdade, antes dessa aberração que atende pelo nome de truta salmonada fique tranqüilo. Aqui você não vai levar gato por lebre. A melhor (e talvez única) forma de se comer sushi bom é encontrar um lugar sério (como aqui) e confiar no sushiman que lhe atender. Lugares bons (mas não metidos e imbecis) não têm todos os peixes em todas as épocas do ano. Para ter isso, teriam que congelar os peixes e, sushi de peixe descongelado não é sushi. Então coma ao balcão, sempre, esse negócio de pedir na mesa é coisa de quem quer ir comer pizza, e pergunte ao sushiman quais são os melhores peixes do dia. No caso do Shin Zushi, o cara vai te dizer e te alertar se houver alguma diferença (novo, fora de época, alterado de alguma forma) e vai te oferecer algumas opções. Quando o par chegar (sim, peça pares dos peixes que escolher) pergunte se devem ser comidos com ou sem shoyu e wasabi. Bons sushimen preparam o niguiri com a quantia exata de ambos, para que o sabor DO PEIXE se destaque. Se, como é meu caso, for alérgico a algum tipo de fruto do mar (camarão, por exemplo), é sempre ir a esses lugares acompanhado e seu/sua companhia não for alérgico(a) avise logo ao pedir o primeiro par. O sushiman vai tomar cuidado para não deixar que a alergênico entre em contato com sua comida ao preparar o niguiri do seu par. Não seja preconceituoso. Se o for pode acabar não conhecendo coisas saborosíssimas como unagui (enguia), tamago (ovo) e coisas que experimentei e não gostei (mas a namorada da época amou) como o uni (ouriço). Quando for ao Shin Zushi, ocupe, de preferência, o lugar mais à esquerda do balcão. Os sushimen aqui se ordenam da esquerda para a direita em mestre, "sous chef", aprendiz graduado e aprendiz. Se gostar de sochu, peça, se não gostar ou não quiser beber álccolicos, peça ban-chá. Não cometa os crimes abaixo:

1- comer de garfo e faca (pode comer de hashi, embora, tradicionalmente, coma-se com as mãos) 2- pedir refrigerante (você vai estragar o sabor) 3- ensopar todos os niguiri de shoyu ou fazer o que chamamos de "sushi de porco" (fazer uma lama de wassabi e shoyu para banhar o niguiri lá. 4- lavar o rosto com a toalhinha quente. Ela só está ali para lavar as mãos. Ah, e não é um guardanapo. Se precisar, peça para ir ao banheiro e lave o rosto e as mãos. Mas use a toalhinha. Ela é quente por um motivo.

Jantar de sábado:

3 temakis Sobremesa - salada de frutas do jeito japonês.

Total R$ 121,00

O temaki é bem modesto. Você segura com 2 dedos.

A salada de frutas vem numa tijela do tamanho de uma xícara. Vem com feijão doce, preto, metade do tamanho daquele que a gente come em casa. Vem também com uma bolinha branca, feito de arroz, do tamanho daqueles ovinhos de amendoim, tem a consistência de maria mole, mas puxa os dentes quando mastiga e não tem gosto pra mim. Vem também uns cubinhos de uma gelatina branca e transparente, quase sem gosto um pouco azedinho to tamanho de uma bala. Tinha pedaços de laranja, morango, kiwi. Só esses pedaços aproveitei.

Quando você entra no restaurante, você abre uma portinha de madeira e quando entra todo mundo da casa começa a gritar. Parece que estão fazendo uma saudação.

Quando você vai embora algo parecido, mas já não sei ao certo, depois que você paga R$ 121,00 por 3 temakis e uma salada de frutas.

O pessoal te faz sentir a vontade, o sushi man da sugestão do que comer e ensina como se come.

É cozinha tradicional Japonesa, diz o sushi man.

Cometi uma gafe de pedir uramaki e hossomaki. Eles não fazem isso.

Pra quem acha que é que nem temakeria que você vai no Shopping pode preparar o bolso e o estômago.

Acabo me convencendo que é sempre minha culpa quando vou a um restaurante japonês e acabo pagando caro pela comida, por que não conheço o ritual de comer comida japonesa. Quem conhece restaurante japonês já sabe que, ao contrario do ditado, o combinado sempre sai caro.

Mas ali acho que faltou bom senso quando calcularam a conta. E sinceramente estava numa outra "vibração" que não me permitia entrar no constrangimento de contestar o valor da conta.

Mais tarde me dei conta que paguei pelo combinado individual.

Mas acho que pagaria bem menos se pagasse por cada um dos pratos. Acho que seria mais justo.

Gosto de comer comida japonesa, sempre que posso.
