Nestled in the heart of downtown Banff, Park Distillery Restaurant and Bar seamlessly blends rugged charm with culinary finesse, offering an unforgettable dining experience. Let's Go........the food – a tantalizing fusion of locally sourced ingredients crafted into mouthwatering dishes that elevate traditional mountain fare. From hearty bison burgers to delicate Bang Bang Shrimp, each bite is a celebration of the region's flavors. But it's the cocktails and gin that steal the show. Park Distillery takes pride in their hand-milling, hand-mashing, and hand-distilling techniques, ensuring each sip is imbued with unparalleled purity and depth of flavor. Their daily distillery tours provide a fascinating glimpse into this meticulous process, perfect for enthusiasts and novices alike. The staff, embodying warmth and expertise, elevate the dining experience with their genuine hospitality and knowledge. Whether recommending the perfect cocktail or sharing insights into the distillation process, they do so with infectious enthusiasm. Viro served us, and I hope I spelled her name right, but she was super awesome, responding with all the headaches and questions I asked with warmth and hospitality. She gets 5 stars... any day of the week. As for the ambiance, the cozy backcountry-inspired décor sets the stage for a relaxed yet refined dining atmosphere. The patio, offering stunning views of the surrounding landscape, is the ideal spot to savor a cocktail or enjoy a leisurely meal. So there it is, Park Distillery Restaurant and Bar is a gem in Banff, where exceptional food, handcrafted spirits, and genuine hospitality converge to create an unforgettable dining experience. They also pride themselves as the only distillery thus far in a national park in Canada. Ain't that something?

OMG NOM NOM NOM! We arrived in Banff hoping we could nab a table at Park without a reservation. We put our name on the waitlist and only had to wait 1 hour. While we waited we had a beer over at High Rollers. The nice thing is Park will send you a text message to let you know when your table is coming up - very convenient and allows you to make your way back to the restaurant. Atmosphere is lovely and the service was outstanding. Our server's timing was spot on. We chose to go with sharing some items which was the right choice. We ordered the Cheese and Whisky Fondue, added the cured meats, Roasted Vegetable Salad and the Housemade Cornbread with Maple Infused Butter. For three people this was more than enough. The food was delicious. The vegetable salad was a fusion of perfectly roasted veggies, greens, and a nice kick of balsamic drizzle. The maple squash in this salad was perfection. Cocktails are impressive! I am not usually a vodka drinker so I was hesitant however - that quickly diminished with my first sip. Yum!!! My two favourites are The Beehive (outstanding mix of Park Vanilla Vodka, elderflower liqueur, blueberry mash, lemon and honey) and the Sawback (Park Chili Vodka, triple sec, pineapple juice, lime and agave nectar). Did I mention how delicious these are? Friends tried (and loved) Observation Peak and The Three Sisters. We didn't even look at desserts as we were more interested in the cocktails. Our server was incredibly well versed in the Park menu and described the flavours bang on. He even recommended breakfast for the following day (Juniper Bistro)! Park is a wonderful place to catch up with friends, enjoy cocktails and very tasty grub!

Tl;Dr: Great place to hang out and enjoy the vibe but the actual quality of the drinks was quite deceptive. Would not be my first choice Park Negroni: Skip* If you try reaaaally hard you might be able to taste the difference in the barrel aged gin but not really. The campari really shines though way too much. It's for sure a run of the mill negroni that has no redeeming qualities. It poured from a premixed containers so it's even less special and you really could have just made it at home. *For $10 it isn't bad so sure. Knock yourself out if that's your vibe. Maple Old Fashioned: Skip Decided to go for a higher quality drink with this one but... it did not go well either. It ALSO came from a premixed container so that was hilarious. One of the most popular and simple cocktails and it's still premixed. Smokey and cacao nib flavors were overshadowed by the maple novelty of this drink. Storm mountain: Get If you like sweet, fruity, and refreshing, this one was actually not bad. I did not observe this one get made so i cannot comment on the premixed-ness of it haha. Hot wings: Get Sure is hot but more so just from the high amounts of tabsco/vinegar used in the sauce. The wings were definitely tasty though and I recommend Service was polite but as we sat in the corner of the bar we were neglected a tiny bit. After settling the bill and leaving, I finally thought twice about why I was charged almost $100 for the above (which is around $65) and realized they probably messed up our bill. Oh well....

Great atmosphere, amazing beers and cocktails! We came for drinks spontaneously, because it looked inviting - and we had to come again. And again. We had different seating each time: once on the balcony, once at a table inside, and once at the bar. Each time, the service was great, friendly and attentive, even when they had a full house (especially our server during our longest stay, Crystal - one quick eye contact from across the room, and she came right over.) The atmosphere is great, especially the bar and distillery look amazing. One time (late afternoon / early evening), they even had a DJ in the middle of the room, who played a fusion of jazz and electronic music, which was fun (and at a perfect volume - even seated right next to him, we were able to have a normal conversation, which is very appreciated). Awesome cocktails as well, my favourite was the Sawback, highly recommended! Most guests seemed to come for the food; since we only had drinks, I cannot judge it, but the portions looked generous and tasty. They will serve you food no matter where you're seated (even at the bar). It's located conveniently on the main street in the middle of Banff, almost impossible to miss (and you shouldn't!). That also puts it very close to the bus stops - buses circulate until around 11pm.

We came here for our first anniversary dinner and making a reservation made all the difference. Yes, we recognize that this was one of the most busy weekends of the year. Service was good. Although the restaurant was extremely busy, we received very attentive service. Absolutely no complaints. Our food was good. Not excellent, but good. We felt that the steak was slightly under-seasoned, but that could be personal taste. The mixology was excellent. Definitely befitting a distillery. Everything we tried was unique and I would highly recommend the sample flight. My only feedback that I hope gets read by the owners is that they go back to their older menu. I visit this restaurant the year they opened and the menu was rustic and authentic to the region. We had trout and wild boar prochetta, but this is definitely not an option anymore. I feel like they placate to the masses and this is good for business. More people are likely to enjoy hamburgers and chicken fingers and french fries. I get it. Unfortunately, they are still charging as though they are unique and doing something interesting. I could have had this same meal at a dozen restaurants in town. Maybe for less than $150/ person. Please use this comment to inspire change, not negative criticism.

This took the award for “Overall Best Meal” we had on our trip to Banff. Mostly because all the elements of our experience was great. I would tell anyone that goes to Banff to come here for dinner. You’ll see all around town that their alcohol is on every menu in the city and when you try it you will know why. Reservations: They will do walk ins if available, but we saw people get turned away. So if I were you, go ahead and make reservations on OpenTable. Ambiance: This was a very cute restaurant. It had the warmth of a cozy mountain tavern but it had a bit of industrial-ness with the views of the distillery. Food: Drinks - I got a Sawback, and my wife got an Old Fashion. These were probably the best cocktails we had on our trip. Cornbread (appetizer) - this was good but probably not “needed”. The bread was very light and the maple butter was just a smidge maple (just a bit sweet). Bison Burger - this was my favorite burger of the trip. It was simple but really good. Rotisserie Chicken Sandwich - this was my wife’s favorite. It was chicken coated in bbq sauce with coleslaw on a bun. Portion-wise, we probably could have gotten away with splitting 1 entree (but we had more fun getting to try 2 different things / sharing them).
