Awesome experience and meal at the Banff Centre's Three Ravens restaurant. Our waiter (Dan) was awesome, and the view overlooking the town of Banff and the mountains was amazing.
We skipped a starter, but were given a complimentary taste of poached mussels with cherry - served cold on a serving spoon. I enjoyed the sweetness of the cherry to counter the saltiness of the mussel. Additionally, we tasted three types of whipped butter (made in house) with bread - matcha, Ash salt, chocolate peppercorn, and a fruit cream cheese. I didn't much care for the chocolate butter, but really loved the Ash salt (smoky and salty) and cream cheese. The matcha wasn't anything aggressive, pretty light and easy for anyone not feeling adventurous with their butter.
Entrees - my wife had the chicken, which she enjoyed very much. Although, the morel mushrooms that I tried were drenched in red wine vinegar I believe, which was off-putting. I had the roasted elk rack which was excellent. Cooked perfectly medium rare, tender, and juicy. The Farrow risotto was a nice, savory complement to the dish, as were the rest of the vegetables and tempura crumbs. The watermelon radish and watercress gave the dish a beautiful appeal, and provided to be a refreshing balance to a savory, deeply flavorful meal. Definitely recommend the elk!!
Dessert - we shared the creme brulee, which was to die for. A perfect caramelization accompanied by fresh fruit, blueberry biscotti, and mango puree. The mango was both of our favorite flavors to add with the creme brulee.

I jumped at it after looking at 5 other fancy restaurants in Banff and I am glad I chose this one! Sadly I would love to try this place again in the day light so we could see the view but that is our doing. Our Waiter had a great smile and we had some great conversations. I started with the Beetroot Soup, with Pickled Cabbage and Dill Slaw and it was so silky and creamy though I felt like the flavors got old to quickly until I found a little piece of Hazelnut which just made it taste divine! unfortunately I had only three pieces and that was it. PLEASE add more hazelnut into the dish it would have been perfect if I had not been searching for a few more. Thai Black Rice and Fried Tofu... this... this was amazing... if only I could express how much I adored this dish I have no complaints and for this dish I will be coming back. It simply took my breath away and just felt like bliss. Well done. My husband ordered the Alberta Bison Tenderloin. It was well seasoned, very tender, mushrooms cooked well, the potato's had lots of flavor. Only complaint was he would have liked a steak knife to cut it better and he did not like the feel of the butter knives. He loved the honey butter and the look of the cute butters but the other two did not have much flavor but the bread was warm and fresh. First, there is no signage for the restaurant so we drove around in circles for awhile, then called the restaurant, and they had sent an employee out to meet us. Apparently bc they are in a government owned property it requires too much paper work to add a sign - what???? Next, we check out the menu, which I should have looked at prior to selecting this restaurant, but we thought how bad could it be? Hmmm The atmosphere is a large cafeteria, and off to one side is a dining section. Huge Windows, gorgeous mountain views everywhere, but the weirdest vibe we've ever felt from any dining experience. We proceeded to one of many empty tables and sat down. Reluctantly, I tried the scallop app. There were more ingredients in this dish, I couldn't understand any of it. Coconut sauce which tasted like mayo, under grilled pineapple which was not grilled and was not hot, powdered strawberry yogurt huh? , radish, beets, parsley you name it! And three small cold scallops. $20! My husband had the sweet potato and carrot soup . Presentation was pretty, soup was ok We politely left after the appetizers. It took us longer to locate the restaurant amongst all the buildings then actually eat there. If you want to feel like your part of a lab experiment, eat here.
