Garde Manger falls into the ‘must-experience’ category - this is not your average ‘pantry chef’ (translated)-themed restaurant, but a cool, nuanced, and intentionally-not-to-be-found seafood-focused eatery (despite the massive chandelier, open kitchen, and well-stocked bar top). An intimately designed but vivacious resto created by Chuck Hughes (known for defeating Iron Chef Bobby Flay on Iron Chef America, but his enduring accolades (Top Chef Canada, Chopped, Chuck et al Cuisine, to name a few) supersede that accomplishment), Garde Manger exudes Canadiana cottage time; imagery of canoes, backpacks, sandy firepits to cook up the day’s fresh catch, married with eye-rolling innovative creations, from start to end. Presentation span wonderfully the spectrum, exemplified by delicately-prepared Turbot Crudo, laced with the freshest of herbs, all the way to roll-up-the-plaid-lumberjack-sleeves to slurp down briny freshly-shucked maritime oysters. Service for everyone.
We were seated at the bar to indulge in our mid-level menu de dégustation – certainly sufficient for two. Our bar seating – while may not be for everyone – was on point; regular Bartender and Head Chef chat-ery, hustle-and-bustle for the eyes and ears, and attentive food & drink on display, all made for a vibrant, eclectic and fun experience.
A pair of Amuse-Bouches started strong, with a quirky Homard Pogo topped with an incredibly generous porion of sturgeon caviar, followed by a contrastingly delicate, dill-infused Razor Clam, expertly prepped and served on shell. Observant wait-staff providing (almost too) efficient service and clearing – cadence for these experiences should be tempered, to allow for a fuller appreciation of the offerings, wouldn’t you say? Thankfully, it did slow to a comfortable pace. The Seafood Platter did not disappoint. Maine lobster, Nordic shrimp, mussels, briny Oysters from NB, PEI, and Les Îles-de-la-Madeleine, served up with a variety of house-prepared mignonettes and Chuck’s own sauce piquante. Tres bien! Paired from this point a Kamptal Reisling, we savored Charred Octopus on a bed on seasoned baby potatoes, the aforementioned Turbot Crudo, and a dill Nordic Salad. We followed with their interpretation of surf & turf, exemplified by aromatic Hangar steak, alongside fresh yet savory scallops bedded on smashed potatoes. Merveilleux. Closing out with a serving of Nonino Prunella to pair with Profiteroles, and Crème Glacée breaded pudding. A degustation to remember; taste buds treated well with a marriage of flavors. Where do I even begin? Dining at Garde Manger in Montreal was nothing short of extraordinary, and it’s an experience I’ll be talking about for years to come.
From the moment we stepped inside, the atmosphere was buzzing — lively yet cozy, with a warm, rustic charm that made us feel welcome right away. The staff greeted us with genuine smiles, and the energy of the place immediately set the tone for what would become a phenomenal evening.
Let’s talk service: absolute perfection. Our server was not only friendly and attentive, but incredibly knowledgeable about the menu. They walked us through the specials, offered great recommendations, and somehow struck the perfect balance between professional and personable. Water glasses were never empty, courses were timed beautifully, and every request was handled with ease and care. It felt like they genuinely wanted us to enjoy every minute — and we did.
Now, onto the food… wow. Every dish was a masterpiece — both in flavor and presentation. You can tell there’s passion and precision behind every plate. We started with the oysters, which were fresh and briny, served perfectly chilled with all the right accompaniments. The lobster poutine is every bit as decadent and delicious as you’d imagine — rich, comforting, and absolutely unforgettable. For mains, we had the duck confit and the sea bass — both cooked to absolute perfection, with layers of flavor that lingered in the best way possible. And of course, we couldn’t leave without dessert — the sticky toffee pudding was the perfect sweet finish.
And then… the highlight of the night: meeting Chuck Hughes himself! What an incredible and down-to-earth guy. He came out of the kitchen with that unmistakable smile and took time to chat with us. It’s rare to see a chef of his caliber so present and engaged, and it made our experience feel even more special. You can tell his heart is in this restaurant, and it shows in every aspect — from the menu to the vibe to the team behind it all.

It was a birthday weekend, a getaway. One of those trips where you hope everything slows down just enough to enjoy the buzz of the city and the clink of a good cocktail. I had a reservation. Thought I did, anyway. Turns out I somehow canceled it, because of course I did. So when we showed up, there was no table, no spot waiting. But here’s the thing: the staff didn’t scoff or roll their eyes or send us back into the night. They found us a place, two seats at the bar. And that, as it turned out, was the best screw-up I could’ve made.
Because behind that bar was Emma. And let me tell you, if you’re lucky in this life, you’ll come across a bartender like Emma, someone who doesn’t just pour drinks but creates a night. She was sharp, funny, warm in that Montreal way that doesn’t try too hard. She made everyone at the bar feel like they were the main character. That’s not a small thing.
We went with one of the tasting menus, because why the heck not. Life’s short, it was my birthday, and the seafood tower came out first like some kind of edible crown jewel and that’s how you start a birthday.
I could go on about every dish and I probably should. But I’ll spare you the full-on novel. Just know this: the snow crab? Mixed with light mayo, lemon, dill- simple things, but when done right, they don’t taste simple at all. Nestled on brioche toasted in brown butter. Ridiculous. Worth flying back for.
But strangely, the dish that I've thought about the most, the one I still dream about, is their salad. Yeah, salad. Shrimp, kissed with lemon and dill, laid out on fresh greens with a green goddess dressing that tasted like it came from another planet. It was clean, crisp, refreshing, and stupidly good. A reminder that when ingredients are respected, they don’t need to shout.
I walked out of Garde Manger full, not just of food, but that rare, precious kind of fullness that comes from being treated like you matter, in a place that gets it right. If you’re ever in Montreal, go. Sit at the bar. Hope Emma’s working. Order whatever she tells you to. You won’t regret it.
