The combo comes with a healthy helping of rice, pickled vegetables, and a tea egg. The chosen meats will be arrayed on top of the rice and drenched with covered in broth, which would then seep into the rice.
Since I have problems processing regret, I ended up buying both combo types to try them all. The pork knuckles were very tender and flavourful, not too fatty, with slightly chewy top layer skin. The soy sauce broth seeped into the skin and meat, steeping all layers in deep flavour. The pork intestines were definitely an acquired taste, but if you enjoy eating innards (or have the perchance for adventure), you'd be satisfied. The combo came with generous helping of intestines that I had to dig deep to reach the rice layer.
With the limited space, most people came for take out. I hope with increased exposure, this hidden gem can outgrow the current venue and spread...
