Manners Maketh the Man.
Most unfortunately whoever is in charge of training Bar Oso personnel glossed over the manners portion of an upscale environment.
When Four Seasons sends you here, speaking very highly of it, management, conceirge will invariably hear about nasty unfortunate behavior that is totally uncalled for and has no place in such an Environment.
Manners Maketh the Man.
But they also make the continued success of any business organization that relies on manners.
I'm going to advise Four Seasons about this. You're welcome Bar O So Rude.
Manners generally speaking is a good thing.
More specifically, when Bar Oso in gourmet culinary write ups makes its claim to fame based on a very unique signature cocktail that has been dramatically altered, the correct response of the Bartender is not to whine that its very difficult to make the key ingredient of the cocktail so you've had to be a miser about it and that you cannot make an exception, making you feel like Oliver Twist.
What I am referring to here is the signature bacon drink (that Bar Oso has chosen for its choice icon image) with a nice healthy bacon strip spread across the top, just like its original claim to fame - that cocktail has since been dramatically altered, transformed into tiny bacon bits into the cocktail. Might as well start sprinkling McCormicks bacon bits here. That drink no longer looks like what it does in the photo. What no customer wants to hear is a whinny little Bartender crying about how difficult it is to make bacon, making a scene. I've never heard of a Bartender whine like that about ingredients that the customer pays handsomely for at $20 a drink. Do the work, stop whining, have some manners or find another job.
Perhaps culinary write ups who initially put Bar Oso on the map need to come back incognito and take a look at your new cocktail and what it has spiraled down into along with unnecessary rude attitude of your bartenders.
Its no way to run a business, especially one relying on upscale visits.
If you think no one will hear about this, you are wrong. Manners in deed maketh the Man, but they also make the continued success of any organization, business catering to those who seek those endowed with exceptional manners and pay handsomely for it. Act professional, man. Act professional. Your driving customers away. Ultimately any slack among the staff reflects poorly on senior management itself.
Bar Oso perhaps needs to hang up a photo of Narcissus painting way too interested in looking at itself than in what put it on the map. Manners. No holds barred service. Impeccable quality. Uncompromising ingredients. Purist fundamentalism...

We don’t often go out, especially in Whistler, because we find many places feel too mainstream—lacking personality, depth, and that “special something” that makes a place truly stand out. But Bar Oso is different. It has soul. It has passion. It has a team that pours love into everything they do.
To Chayce, Chef Andrés, and the entire incredible team at Bar Oso—thank you. Thank you for your dedication, for your talent, for your warmth, and for creating a space that feels so alive, welcoming, and unforgettable. The world needs more people like you.
Bar Oso, you have set the bar (pun fully intended) for what a 5-star experience should feel like. We can’t wait to be back.

Love the atmosphere of the establishment! Make sure if you want to try this spot to arrive early. They open at 5 PM and do not accept reservations. It’s a first come, first serve basis! One of the few restaurants in Whistler Village with an amazing Wine List; we wanted to try them all!
Upon arrival we were told it would be a 2 hour wait 🫣 so we left our name in the list. 10 mins later we were told there was availability so we ran because they give you a grace period of 10 minutes to claim your table and we were by the lifts.
We started our night with a White Wine from Ycoden-Daute Isora Spanish Wine. 2021 Viñatigo Listan Blanco de Canarias. Very very different but good at the same time. Wish it was a little colder.
We ordered many different tapas such as :
• Croquetas de Setas were okay but not impressing • Berenjenas con Miel were tasty and very different as the ones I’ve tried in Spain. You wouldn’t think you’re eating an eggplant as it has the outside texture of a mozzarella stick. Also it seemed more like maple than honey. • Patatas Bravas were not impressive at all. • Wild Scallop Crudo was definitely my favorite tapa of the night! • Octopus “Jorge” style weren’t enjoyed as Octopus were overcooked! Major disappointment! • Lamb Albóndigas felt more like an Indian cuisine over Spanish. Table was excited until we tried it. • Beef Tartare was pleasantly great but needed that hit of truffle dressing as it mentioned in the menu. Lacking on it a bit. • Duck Liver Parfait Montadito was another hit; very yummy!
We were enjoying our table so we switched and followed our dessert with another Spanish wine from Getariako Txakolina White Wine. Katxiña Apatei de Katxina Txakoli were refreshing and light.
For desserts we had:
• Basque Cheesecake was okay and you can find them also at Provisions which is next door and I am sure on the cheaper note. • Crema Catalana loved it!
All in all it was an okay establishment. Food does need a more effort on what Spanish Cuisine really tastes and flavor...
