Brilliant chef and innovative dishes, however the experience was unfortunately brought down by horrendous service (except for one waiter who was actually attentive; the rest looked like people who hated their jobs and couldn't care less about their customers).
FOOD: Their small plates are similar to tapas sizes, suitable for ordering several to share. Very impressed with the fresh ingredients and plating techniques, only one minor letdown for a lukewarm Manila clams dish. Their signature uni pasta lived up to its hype, and rack of lamb was tender and juicy. Sweet potato fries came with a honey-yogurt dip, where the tangy flavour cut through the greasy (tasty!) fries. Chefs certainly pulled off every dish to near-perfection.
SERVICE: In short, it felt like dining at a cha chan teng. Since it was Mother's Day, I booked several weeks in advance and requested some sort of greeting on the dessert. Man on the phone reassured that's not a problem. A week before the reservation and on the day itself, they called to confirm - and again, I asked for the dessert arrangement. Come the day of, our dessert came without any greeting, and when I asked why it wasn't arranged despite triple confirmations, the young waiter's immediate reaction was "Really? We didn't get the memo." Not the slightest apology or offer to amend the situation by simply bringing it back to the pastry chef. Aside from that mishap, our glasses of water were not filled even once, nor were our glasses of wine (needed multiple promptings to have them topped up). we sat down and ordered, but were not really sure if the waiter who took our order actually got all our orders. And then while we were still waiting for food that we ordered, a waiter came to our table and asked if we need to order more because it''s time for last order, so we informed him that there are things we ordered that still haven't came yet, and instead of asking us which dishes have not arrived yet, he again just insisted and asked bluntly again if we want to order more because it's time for last order. Finally we got a word in and asked him to check on our missing orders and of cos, they weren't even ordered.
we ordered the shrimp which they will torch in front of you at the table, however the girl who came with the torch couldn't even handle the fork and spoon that's used to hold the shrimp in place for torching, and in turn broke the head and so all the juices and yummy bits were all dripped into the pan for torching, so there were none left to supposedly be mixed with the rice for you to enjoy for this dish.
and then to top it off, there's no toliet paper in the restroom!! And this is supposedly a somewhat upscale restaurant, at least from what they are charging us.

First, we had the Yellowfin Tuna Tartare with Watermelon for $168. The presentation was exquisite, and the fish was fresh and flavorful. The combination of mustard sauce and watermelon created a refreshing and delicious taste.
Next, we tried the Sea Urchin Pasta with Flying Fish Roe and Fennel Foam for $288. The sea urchin flavor was rich and creamy, and the fennel foam balanced the richness. The sauce was creamy but not heavy, and the texture of the pasta was just right. It was really delicious!
If you're a fan of lamb, you must try their Roasted Lamb Rack with Seasonal Vegetables for $328. The meat was tender and perfectly cooked, with a hint of charcoal flavor. It was very tasty.
For dessert, we chose the Baked Coconut Alaska with Malibu & Shredded Coconut for $98. It wasn't overly sweet, but rather had a refreshing taste. The highlight was the coconut ice cream inside.
To accompany our meal, we tried the restaurant's cocktail, the Snow White, for $108. It had a coconut flavor and was very enjoyable.
