Three visits, two bad experiences
Setting: great. The photos of other reviewers will give a sense of that. This is a place for politicos, and the elite of Bogota. If you “need to be seen”, then you should go.
Food: a few good dishes, but too many errors. Temperature (bisque far too hot, main course fish far too cold just two examples), some too salty and others too bland. On the plus side, I don’t know of a better Spanish restaurant in Colombia.
Service: This is my big grievance. So many errors, delays. If only on one visit, I would not be so critical. One memorable example: When I could not eat a fish dish (which recommend by the waiter!) because it was too salty. I ate about 1/3 (i was hungry) and then left it for about 20 minutes before a visit from the waiter, i had tried to signal a waiter unsuccessfully … i was dining alone mid afternoon and the place was less full…. The discussion “Ya terminaste?” Me : “no puedo comerlo. Está demasiado salado”. Response: “ok. Quieres postre o café?”. Can’t make that up. Service at a place of this cost and reputation needs to be far better.
Also, on my last visit I arrived solo mid afternoon without reservation. The dining room was nearly empty and they said the only available table was in the bar, near the door. I asked for a table in the main room but was denied as they had reservations. The main room was much less than half full during my stay there.

Smoke trout (excellent) gambas (phenomenal) octopus (both plates are amazing) lobster tail (great) orange duck (great) paella (great) there are 3 ibérico ham here. Serrano is cheapest but without fat. Then there’s ibérico ham which is 3 year. And a more expensive 100% ibérico which is 4 year. The best thing to get is the 100% ibérico (excellent) with manchego cheese. Both chocolate desserts are excellent. Lemon pie and passion fruit pie are both excellent. Ginger ice cream amazing. I ate half of the menu here already and I can honestly say this is the best seafood in bogota. Personally, I skip the steak here as it can’t compare to steakhouses in the US or Asia/Japan but pork duck and oxtail are all great, but for the best experience stick to seafood and the 100% ibérico ham. Read moreI have been in this spanish restaurant; it is located between ninety six street and tenth race, in Chico neighborhood. You need booked a table before you go there and you probably won't find parking easily, so it's important to get there early. They are experts in spanish food; you can eat many plates, for example beef stew, paella, tapas, Madrid style tripe and different spanish dishes. They cooked traditional desserts as Crema catalana and Pavlova, they were amazing. In my opinion, Pajares Salinas was an incredible experience, because when I have been in the restaurant it was clean, organized, well decorated and the waiters were attentive to all requirements. But, the restaurant has a problem, because it is expensive, the dishes cost $90,000 COP average, so people who can pay for those plates, have a high average life; you can't always give yourself this tastes. Generally, the restaurant is amazing when you want to eat delicious dishes and you want to celebrate a special occasion. I recommend Pajares Salinas and I hope I am going to eat the delicious...
