After starting the evening in Symposio with a prosecco extra brut from Bosco del Merlo de Veneto, I was enjoying a gorgeous menue with paired wines. The first plate combined an organic fruity red wine, less tannins, from Peri Peri from Sicily with cauliflower nuggets coated with breadcrumbs, pomegranate and lemon aioli. The hot tip is the dressing. The strong smell of vanilla of the Negroamaro Mirintino from La Pruina, Puglia, even less tannins than the Malpelo, opened the second plate. Tender venison loin, perfectly going with the red wine, grilled polenta, enoki mushrooms jacketed with prosciutto, and sweet peas. An absolut pleasure. Last but absolutely not least, the desert. Profiterol, filled with lemon cream, lying on a bed of Limoncello whipped cream. Accompanied by a semi sweet whit wine from Dominio imperfetto from the Abruzzo region. Named White scandal it is anything else but a scandal or imperfect. The taste of mint went well with the Limoncello whipped cream and the basil. All in all a perfect experience...
