We were looking for a Ramen restaurant, and found that the first two places we looked for were closed for unknown reasons. The third place was this restaurant, and when Google Maps told us that we were at the address, we couldn't see the restaurant. It wasn't until we were standing on the opposite side of the road that we spotted the place. The facade of the place is small, and can therefore be difficult to spot. We tried to get a table, even though we hadn't booked a seat, and if we promised the restaurant to be ready within 1 hour and 15 minutes, they could offer us a table. We gladly accepted that offer. We had a wonderful Ramen that was super tasty, and as an option we got some chili sauce on the side, to spice up the dish a bit, if that's what we wanted. The staff were super friendly and service-minded, and created a good atmosphere in the restaurant with their nature.
The restaurant was very nicely decorated in the relatively small space, with a view of the kitchen, where you could see the chefs at work. It's always good when a restaurant isn't afraid to show off their kitchen.

The gyoza has a very "homemade" feel to it: relatively thick skin and lots of meaty filling. It isn't what I expected when I ordered gyoza but it was good nonetheless.
I ordered their shoyu tori chintan. The toppings were good (except for the menma, my favorite topping but lots of shops here seem to have trouble getting it right), but the soup lacked a bit of depth (or maybe the flavors were masked by the mayu). I think mayu is a strange choice for this kind of soup. There also wasn't enough soup and it needed a little more salt to really give it some kick. The noodles were okay, but they could be chewier or snappier, something to give them more personality. I think mine were slightly overcooked, oh well.
Somehow, despite all of that I liked this bowl. Something about it felt like they cared and are actually trying (as opposed to the many shops open just to cash in on the trendiness of ramen). I hope they can improve their recipe because I would like...

It’s one of the best ramen I’ve had in my life. From broth to noodles, the ramen was perfect. I chose the Gaijin ramen which is a duck ramen with foie gras. It was described as French-Japanese fusion, which I couldn’t imagine how both cuisines would come together. I’m always wary about trying fusion ramens since most don’t come out right. I’ve had a fusion ramen from the Ivan’s Ramen in NY(owned by a famous ramen chef who was trained in Japan and won multiple awards), but it was not good.
Gaijin ramen was so good! Foie gras’s fatty cream flavor and deep complex flavors of broth go perfectly together. It creates the similar mouth-feel and flavor combinations like when you eat pork chashu with tonkotsu broth. Absolutely amazing combination and such a brilliant recipe.
