S'il y a une institution à Paris en ce qui concerne les éclairs, c'est bien celle-là. On ne peut prétendre avoir mangé les meilleurs éclairs de Paris sans être passé par "Éclair de Génie" qui est la référence en la matière. Moi qui ai testé beaucoup des pâtisseries des plus connues, celle-là était peut-être la référence qu'il me manquait pour pouvoir enrichir mon bagage. Il en existe plusieurs boutiques à Paris, je n'ai pas choisi la maison mère mais la plus proche, à savoir à Lafayette Gourmet (où il a fallu résister à la tentation de "Pierre Hermé", "Thierry Meunier" ou encore "Sadaharu Aoki" autour...).

Les choix sont nombreux et variés, c'est bien la particularité de ces éclairs revisités des dizaines voire des centaines de fois. Je ne sais pas si Christophe Adam est un génie, mais c'est un créatif farfelu dont l'anticonformisme est sa caractéristique. Mais pour pouvoir décliner autant d'éclairs différents, encore faut-il avoir une solide expérience de pâtissier. Christophe Adam a travaillé comme chef cuisinier chez "Fauchon" en plus d'avoir côtoyé "Pierre Hermé" et "Sébastien Gaudard". Il a donc le niveau pour pouvoir varier ses éclairs à l'infini avec un minimum voire aucun raté.

Dans le choix varié des éclairs, il n'y a pas que les éclairs tels qu'on les connaît à base de pâte à choux (majoritaires, certes), j'ai choisi en premier lieu une barlette pralinée amande. Il s'agit, à la place de la pâte à choux, d'une pâte sablée en forme rectangulaire avec les bords uniquement sur la longueur. C'était excellent ! Franchement, la meilleure crème pralinée que j'ai goûté jusqu'à présent ! Si cette crème était contenue dans un Paris-Brest, cela aurait pu être mon meilleur Paris-Brest... Une crème parfaitement goûteuse sans être lourde où l'ajout d'amandes au praliné est étonnamment très bien vu, moi qui aurait cru cela redondant. De plus, la pâte sablée est bien réalisée et évitant d'être trop imposante car elle est légère.

Ensuite, j'ai pris un éclair au citron yuzu meringué. Pour le coup, j'étais un peu moins enthousiaste mais j'ai tout de même trouvé cet éclair intéressant. Intéressant parce que la pâte à choux est assez ferme et très boulanger. Ce n'est pas le style de pâte à choux que je préfère mais il faut reconnaître que cette pâte à choux a du caractère avec une bonne fermentation et une pointe de sel qui contribue à l'adictivité de l'éclair. Mine de rien, la pâte à choux n'est pas délicate comme on la voudrait idéalement mais elle s'exprime d'une autre manière, en faisant davantage d'effort à la mâche et avec son élasticité toujours présente, l'on en devient accro et on a presque ce « besoin » de prendre de nouvelles bouchées. La ganache au citron était équilibrée, pas mauvaise, pas exceptionnelle non plus, avec de la meringue italienne très correcte.

Dans l'ensemble, le rapport qualité/prix peut sembler excessif, d'autant plus que la taille des éclairs est assez petit (6 euros l'éclair environ) mais quand on voit la qualité du travail sur chaque éclair avec une telle variété et un résultat qui se doit d'être à la hauteur, c'est un travail monstrueux. Absolutely the Best Éclairs I've Ever Had! His most famous creations are the dessert cube in Photo 1 and various fruit-shaped pastries. When I visited, they had 5 different desserts available, so I bought one of each to try. Every single one was delicious!! If I had to pick just two to recommend, I'd go with the Paris-Brest in Photo 2 and the lemon pastry in Photo 3. Their Paris-Brest is incredibly fragrant, and the lemon has a sweet-sour taste that's also refreshing. The prices are a bit higher than most dessert shops, but after tasting them, you'll feel it's totally worth it—not only are they beautiful to look at but also incredibly tasty. It's been a long time since I've had such a delightful dessert experience. His Instagram also showcases many other amazing-looking pastries, so I hope to try the peach, orange, and apple tarts next time I visit.
