I had heard the hype about this farm to table restaurant, but its execution surpassed all expectations. I want to first thank my server Georgie, who was not only professional and friendly, but also gave great recommendations for each and every course.
I also want to commend the bar staff who made not only a wonderful rosemary infused Negroni, but expertly paired glasses of wine for each course.
Having said that, it is the quality and inventiveness of the kitchen and bar staff that made this such a memorable meal. The insistence on the finest locally sourced ingredients and the innovative way they put them together is what makes this restaurant stand out.
The menu changes on a weekly basis, so this review focuses on the ingredients that were available for the late spring.
I started out with their bread and browned butter starter, and the bread was fresh and complex. A wonderful way to start off a meal. That was followed by the white asparagus that was complimented by hazelnuts to give it an added dimension of texture, and a marvelous sandefjord sauce which added both layers and depth of flavor.
The second course of mussels, if anything, surpassed the first course in terms of freshness and complexity. The mussels were perfect in their quality and in the way they were cooked. The broth which contained both leek and lovage created an umami on the palette that needed to be savored. It is a dish that the restaurant is famous for, and I can see why.
The main course was a half rack of pork spareribs that were accompanied by a small chicory salad with ranch dressing and a rhubarb marmalade. It was savory and supremely satisfying. A filling and delicious dish.
To rap things up, there was a strawberry dessert that included a calvados and elderflower soaked savarin and was paired with a ricotta ice cream. The freshness of the strawberries was impressive, and the way the flavors harmonized with one another.
Overall, the restaurant exceeded my already high expectations, and made this a highlight not only of my time in Berlin, but Europe as a whole. I cannot recommend it...

Three small issues: At dinner, the selection of cheeses from the region didn't create the same level of excitement as the rest of the menu. To our surprise, main courses arrived at the table very shortly after the appetizers (we hadn't even finished half of them). But the staff perfectly revovered and they prepared everything fresh 15 minutes later. Last but not least, the reservation system with two shifts and the pressure resulting from it is a mood killer when being reminded ("You have only 40 minutes left") and finally being kicking out, albeit friendly ("The next reservation is here now"). Although the staff acknowledged our preferences upon arrival, the vegan options fell short. They forgot to have one vegan option for the appetizer, and when we asked, they scrambled and took 20 minutes to give us 2 cut tomatoes with olive oil, which paled in comparison to the other options (flank stake tartar, and burrata with peach dressing). The main course consisted of sauceless, soggy gnocchi for the vegan dinner, while the vegan dessert was simply strawberries, unlike the flavorful options provided to others (Italian merengue).
