OK, ice cream is my wife's kryptonite. She avoids it because she cannot ever get enough, and she is extremely good at saying no to ice cream.
Brynja is the one ice cream she cannot say no to. Ever since we visited at the end of April 2016, she has been badgering me to go back to Akureyri, simply so that we have the excuse to eat more of the ice cream. We had their ice cream three times, and it is now the mother ship of all ice cream places.
What makes it special? They serve an ice milk soft serve, that is light, smooth, and not too sweet. Unlike the standard premium ice creams, this is easy to lick and swallow, goes down so easily. They have several dipped toppings as well, the usual milk chocolate, plus dark chocolate, strawberry, and caramel. My wife cannot eat chocolate (gives her headaches), so the caramel was her choice, and the dark chocolate was mine. Fantastic!
The day after we had our first cones at Brynja we went on to Lake Myvatn. In order to maintain peace amongst us, we had to drive back to Akureyri the next day to get another cone. We ate lunch in Akureyri, and then stopped on our way to the Langanes Peninsula to get another cone.
Any time we come back to Iceland, we will probably have to catch a plane to Akureyri in order to get some of those dipped soft serve cones. Shamefully, I must agree with my wife that it would be...

Be warned, if black licorice isn't your favorite, there are a variety of Icelandic chocolates which are actually chocolate-covered licorice (lakkrís). The taste isn't very strong though.
If you don't speak Icelandic, it will be up to you to figure out what to get here. I don't fault them for that, it's their language and their country and their ice cream shop. They helped me without us being able to directly communicate, and we got by. :)
4 stars (let's say 4 and a half) because I had heard from several sources that Icelandic ice cream is uncommonly good, and that this ice cream shop stood head and shoulders above the rest. I think they have a good concept with the toppings and the mixes, and I enjoyed it, but as for the ice cream itself, I thought it tasted just normal. Some sweets have a special refreshing sweetness and some are just sugary; the ice cream here turned out to be the just-sugary kind. Not too bad, but I was anticipating the...
