I had no idea when I was planning our visit that we'd have *two* fantastic meals I felt worthy of at least one Michelin star! Serendipitous to say the least. Again, our meals were like eating fine art - every plate was gorgeous and it took everything we had not to inhale but slow down and savor the incredible flavors. The meal started with an amuse-bouche consisting of a sushi bite, one I can't remember, and a delicious gougère. For starters, my husband had the stuffed courgette flower surrounded by an unctuous seafood bisque - the bisque was utterly amazing. I had the goat cheese salad, a riot of color and taste. My husband had the John Dory nightly special for his main, while I had the most perfectly cooked lamb with an apricot compote. Desserts were a trio of chocolate confections (husband) and a scrumptious pavlova (me). And as a special surprise, they brought out a plate with "Happy Anniversary" written in chocolate, with a chocolate raspberry truffle and a mini lemon tart. The lemon flavor was to die for! Our server was very correct and knowledgeable, but the real delight was the assistant server - I wish I'd asked her name. She graciously allowed me to speak French with her (she's from Montpellier) and we had such a great time chatting I was afraid I'd get her in trouble for neglecting her other duties. She was the true gem of the place. The restaurant is cozy and intimate, and it was completely packed. I wholeheartedly recommend booking a table!

Hello!

So let's just start with the fact that my husband and I are from Amercia, and we are making serious moves towards living in Ireland.

It was our one year anniversary, in November this year, and we have been together for seven years. We flew to Ireland and made our reservation at Dax before leaving the US. It was a hopeful reservation based on word of mouth that the restaurant was wonderful. The rumors were true! While I briefly listed the anniversary in our reservation, we had no expectations for special treatment. Wow, were we wrong. We were greeted by an incredibly kind staff who took our coats and walked us over to the loveliest table. It felt like we had our own special nook just for the two of us.

After being seated the first surprise arrived! We were each brought a delicious bubbly glass of champagne (I'm not positive it was from the champagne region in France but who cares! It was exceptional), and the gentleman who brought it gave such a sincere congratulations to each of us.

We placed our orders for appetizers and mains and relaxed. We ordered a great bottle of red wine and then experienced our second surprise. A delicious croquette, the perfectly sized taster that was so good I wished we had ten more.

Our appetizer, an Aran goat cheese, was a bit unexpected and not quite what we preferred, but I believe that was a failing of ours and we should have read the description more thoroughly before ordering. The stars of the meal were my venison and my husbands steak. We both worked in fine dining for many years and have had some of the best food options available. Let me just say that Dax Restaurant just moved up to our top three restaurants we've ever been to. The service was exceptional and the food was spectacular. We aren't moving to Ireland just to go to Dax more often, but it's now part of our excitement. If we can go to Dax Restaurant every week then life will be so much more wonderful!

Thank you Dax Restaurant, for making our first anniversary so very special, and for giving us another reason to move! We cannot wait...
