Hartigan's does the best pint of Guinness in Dublin. Why ? The pint is creamy and fresh. The keg is very close to the tap (a 'short draw' for Guinness aficionados) There are also two other reasons that rarely get touched on (or maybe it's just me !):
• The Guinness has perfect carbonation. Guinness isn't supposed to be fizzy like lagers but too little carbonation leaves the pint lifeless, like a week-old Coca cola. The pint here is perfectly crisp without being fizzy.
• The temperature. If a pint is too cool you won't taste much, a technique usually applied where a bar has terrible Guinness. If it's too warm then it seems stale and not fresh enough. Here again, the coolness (but not coldness) of the pint goes perfectly with the crispness.
The pint is never left settle too long before serving as this can undo all the good things above. I've visited nearly every 'old man' pub in Dublin in search of the best Guinness the capital has to offer: Kehoe's, Neary's, Toner's, Mulligan's etc. but Hartigan's always comes out top.
