Pizzium — Restaurant in Bologna

Had high hopes based on good reviews, but sadly this wasn't a great experience. Made reservations, and good news is the place was empty, so we got seated right away. Unfortunately the lack of tables didn't mean prompt service, as we waited 10 minutes with menus closed while the server looked at her phone. Put our order in, and the Nduja di Spilinga bruschette was underwhelming, just a paste from a jar spread on thinly. I ordered the Calabria pizza, and was shocked to find it was just a Margherita pizza with a few dabs of the Nduja paste on it. So much for the actual Calabrese salami. Flavorless Pomodoro, bland cheese. Only saving grace was the pretty good dough and fresh basil leaves. Took a long time after eating again to get the bill. Only people who got good service were a couple who looked like the owners, they came in, got seated, served drinks, and walked out, all in the time we were eating. Would have given 3 stars, but we constantly had fruit flies buzzing around our drinks and food, which is a sign of kitchen and produce quality....

Everything perfect, expect few things - no clear information about coperto (2.50€ per person). Coperto information is available only after scanning menu in restaurant - menu is not available online (okay, this is, but with no prices... And of course no information about that additional payment). Waiting time ~40mins, which seemed a little long looking at the restaurant occupancy. No olive oil was given for the pizza (pizza was really great, but it missed this small olive oil touch...

CAPOLAVORO DI GUSTO! Una scoperta che ci ha fatto sentire nella patria della pizza! Un menù ben studiato, vario nelle sue scelte, dalle bruschette per cominciare con il piede giusto, a piatti semplici e gustosi per chi gradisce una proposta diversa, fino ai dolci. Una nota speciale va dedicata alle pizze: dagli accostamenti classici e vincenti, alle pizze regionali, per assaporare i gusti genuini rappresentativi delle varie regioni, con prodotti decisamente di qualità. Ancor prima di tagliarla, ci si rende conto della maestria dei pizzaioli: cornicione alveolato, stesura regolare e cura nella presentazione degli ingredienti, un impasto leggerissimo che ci ha fatti uscire soddisfatti e sorpresi, ma per nulla appesantiti. Tutti i sapori erano armonici, bilanciati, goduriosi, una scioglievolezza che ci ha catturati! Personale di sala preciso, solare, pronto a rendere unica l'esperienza dei clienti, un biglietto da visita che valorizza ulteriormente il locale. Un ambiente molto curato con cucina a vista all'entrata (Attenzione! La simpatia e la bravura dei maestri pizzaioli sono contagiose!): un'atmosfera accogliente, arricchita da dettagli che fanno la differenza, con meravigliosi motivi delle maioliche campane che ti avvolgono dalle mattonelle ai piatti dipinti a mano.
