So I have been thinking a lot how to write this without offending other ramen places… but I have to say it bluntly as it is. No other ramen place in Pisa comes even CLOSE to Kabuto ramen. I have tried every ramen in Pisa and none of them had this authentic, one of a kind original flavor. From starter to dessert it’s all home made and with love. A great atmosphere, very lovely and supportive staff. Two great chefs. I really don’t know how to say it but it was just perfect. The broth, the noodles, the taste overall. It was all perfect. I was very happy about it. I will not visit any other ramen place but this one. Also make sure to find this super delicious gem by looking out for the banner which is written in Japanese (see picture) it’s the best you can do for your taste buds and stomach. In a year I tried every choice from the menu and I cant choose my fav course, every single one will deserve your trust. Miso ramen, gyoza and tsukune teriyaki are a must though. Once in a while there are special ramen out of the menu that will blow your mind. There are a few good choices for vegeterians but NO VEGAN, absolutely not. One chef is Japanese and the other one lived there for a while to learn the Art of ramen. The waiter is incredibly prepaired. It's a small, traditional ramen shop so be patient. The ramen itself was a amazing. The broth was rich and flavorful, the noodles perfectly cooked, and the toppings were abundant. The additional slice of chashu pork is must have!
