So I have been thinking a lot how to write this without offending other ramen places… but I have to say it bluntly as it is. No other ramen place in Pisa comes even CLOSE to Kabuto ramen. I have tried every ramen in Pisa and none of them had this authentic, one of a kind original flavor. From starter to dessert it’s all home made and with love. A great atmosphere, very lovely and supportive staff. Two great chefs. I really don’t know how to say it but it was just perfect. The broth, the noodles, the taste overall. It was all perfect. I was very happy about it. I will not visit any other ramen place but this one. Also make sure to find this super delicious gem by looking out for the banner which is written in Japanese (see picture) it’s the best you can do for your taste buds and stomach. The whole experience was mind blowing. Try the beef starter for sure. Never had such tender beef before. Also have the miso ramen. It’s just AMAZING. I really cannot find the words to describe it but it’s a whole experience. As if in the middle of Pisa you are in Japan with all its authentic taste and...

gona write a few words in English though I'm Italian cause yes, I do love this shop so much to do it this way. In a year I tried every choice from the menu and I cant choose my fav course, every single one will deserve your trust. Miso ramen, gyoza and tsukune teriyaki are a must though. Once in a while there are special ramen out of the menu that will blow your mind. There are a few good choices for vegeterians but NO VEGAN, absolutely not. One chef is Japanese and the other one lived there for a while to learn the Art of ramen. The waiter is incredibly prepaired. It's a small, traditional ramen shop so be patient. I travelled a lot and tried a lot of ramen but, in my opinion, this is n.1 ramen shop in Italy. Give it a chance...

I had the pleasure of dining at this fantastic ramen restaurant. From the moment I walked in, I was greeted with a warm welcome and impeccable service throughout the meal.

The ramen itself was a amazing. The broth was rich and flavorful, the noodles perfectly cooked, and the toppings were abundant. The additional slice of chashu pork is must have!

In summary, this ramen restaurant is a hidden gem that deserves all the praise it can get. Whether you're a die-hard ramen fan or just looking for a delicious meal with outstanding gyoza dumplings, this place is a must-visit.

P.S the description on reservation card with name in Japanese is more than adorable! Very personal touch to each guest.

Locale piccolo, ma accogliente. Ambiente curato e decorato con oggettistica e scelte di design che richiamano locali tipici giapponesi senza sfociare nelle imitazioni stereotipate che si trovano solitamente in Italia. La cucina è praticamente a vista e durante la permanenza si ha il sottofondo delle preparazioni che contribuisce a fare atmosfera. Ci sono pochi coperti (circa una quindicina) e conviene prenotare già dal lunedì nella settimana in cui si vuole andare. Nel weekend ci sono due turni per la cena. È possibile fare tavolo di gruppo fino a 7 clienti. L'apparecchiatura è semplice, con tovagliette di carta, bacchette e cucchiaio di legno per il brodo del ramen. Il personale è attento, cortese e disponibile ad aiutare nella scelta di piatti e bevande e a spiegare come gustare al meglio i piatti scelti. Il menù è compatto, ma variegato sia negli antipasti che nei ramen e sono presenti anche scelte vegetariane. Buona selezione di bevande con anche birre artigianali sia giapponesi che locali. Durante la mia cena era presente anche un fuori menù prontamente segnalato dal personale di sala durante le ordinazioni. I dolci e i fine cena sono segnalati su una lavagna a parete e anche qui vi è una buona selezione con piatti sia tipici giapponesi (dorayaki etc) che più tipici occidentali. Il ramen era molto saporito e si distinguevano bene tutti gli ingredienti. I noodles son rimasti compatti ed elastici senza spezzarsi. Come porzione sono almeno 150g di pasta più il brodo e il condimento, ma il tutto non risulta pesante. Eccezionali i dorayaki. Come prezzo con antipasto, ramen, dolce e bevande ci si aggira intorno ai 30€, ma ne vale assolutamente la pena visto un rapporto qualità prezzo ottimo.
