Let s start with things one could consider negative. The place is small very small, not negative for me since I like to feel that I am doimg something original. The seats are supper nice, many of them are done by actual big old books... hi stools maybe uncomfortable but for me was part of experience simce it gave me the righ hight to see the chef. All the cutlery is made of compostable materials and here is why, you are entering a LABORATORY you see them cooking for you, its the experience of chefs trying to give you the best quality they are capable of. And the prices are okey, midium range wich for a place with this quality of food is totally worth it.
I work as a tour guide in Rome but I am an eternal tourist and every time I have friends visiting I try new places I walked in this shop because of its name MARITOZZO is the most traditional Roman sweet you can get and I wanted my brother and her girlfriend to try it. I walked in at 11.30am and even though the chef was preparing for lunch cutting all his fresh pasta, he stoped to give me his full atention. We had a MARITOZZO AL TIRAMISU. Belive me we loved it to a leveal that is hard to express. And seeing the shef whiping that cream exclusively foe us was sublime. Maritozzo are not so easy to find in the center of rome since is all tourist oriented and they end up eating things tgat are italian but not from Rome. But I would have never expectes to not onky find the sweet pastry both in traditionak way with whiped cream and with this amazing twist with tiramisu in the heart od trastever,. Thank you
I know they give carbonara lessons I highly recomemd anyone to do it. I already recomended to some tou4ist ckients today, from the bottom of my heart I think its my discovery of 2019. And I mentiom the things you could see as negative so that you see how objective I am being, I actually would love to remember the chefs name but I dont.

The cardbonara pasta came lukewarm at best. I was surprised since he made it right in front of me but then I realized they use an electric convection system. Also, it's certainly not the best I've had so far and I've been in the city for only 4 days. This was 3/5 at best. It's also really frustrating eating with a plastic fork and by the time you get to half your meal, it's cold.
At first I didn't think much about the use of disposable plates and plastic cutlery. But then I saw how they made my Aperol Spritz. They just poured the pre-made Spritz that comes in a bottle, added ice, and voila. Charged me €7-8 for a bottle that costs €2.5-3 in the supermarket. That makes me believe they are probably taking shortcuts vs actually it being an ecological thing.

Read moreThis hole in the wall had the best carbonara and amatriciana we have ever had! They were among the best dishes we had our entire trip. Will definitely return if we get back to Rome one day. There is a reason it was rated #1 carbonara by Roma Today! The fresh pasta and high quality ingredients really make a difference. I had a red wine to go with the meal.
We also tried 2 savory and 1 sweet maritozzo. They were nice to try for a change of pace. The whipped cream one was not too sweet.
The food was hilariously served on paper plates that could pass as porcelain in a photo. Definitely more casual dining.
