This is one of the best restaurants I have ever been in my life. I have been in a many, worked in lots, owned a few, trust me, it is hard to achieve such heights.
I am amazingly surprised it is not in the Michelin guide, it would easily get 2 stars (the 1st one is too easy to get) in my opinion.
This year was my 2nd visit. I drove to Torino just for this restaurant, so my family can live this wonderful experience as well. Last year was my 1st time, I came alone, stumbled on it randomly, and decided to get in, impromptu style. It brought me to another place.
First of all, I love meat and eat lots of it. My interest for vegan restaurant is not new however, but it is not necessarly my "go to". But this vegan, high end restaurant is very classy, innovative, and most importantly, tasty.
The staff was amazing, there was a definite improvement from last year (more staff and more knowledgeable about wine especially).
The chef is an old guy, he is like an artist lol ! I don't speak Italian so I guess he was not very engaging with me, but the staff made up for it (for those who could speak English). The chef was welcoming and warm with the other Italian speaking customers.
This year, 2 dishes out of the 9 were a bit too salty and sub par in my opinion, last year, all the dishes were amazing. The wine pairing is a must. The wine they present are almost all exceptional and new to my palate. Italy is so diverse in wine, hard for someone not local to grasp even 10% of it.
You will for sure experience something new, visually, texturally, taste buds wise.
Get the wine pairing, it is worth it. They also have something that I have seen for the 1st time, a tea pairing for people who do not drink alcohol. This was very surprising for me.
This place is also a great value in my opinion. Most of the 2 star star micheling guide restaurant of this caliber are easily 200 euros + per person. Here the 5 course menu is only at 55 euros. The 9 courses below 100.

I got the 9-experiences with the 4-glasses pairing, and my companion had the 7-experiences with a single glass. We both were thoroughly impressed with everything. One of the two extras I got was a nod to molecular gastronomy, with some pods that I think were freeze-dried that you dip in different varieties of olive oil. Think freeze-dried astronaut ice cream, but with flavors like zucchini, sweet potato, radish, and artichoke. Interesting, but I'd not get the 9-experiences a second time just for that. But the other "extra" that I got, and my friend did not, was some little stuffed pasta with this amazing vegetable jus that made me wonder at the chef's ability to get flavor like that out of vegetables. The risotto was perfect, without a drop of cream, the smoked asparagus soup was somehow impossibly just as good as the artichoke soup at a famous place we visited the prior week, and the dessert (main ingredients were strawberries and cucumber cream in a piped almond milk cream cup) and after-dinner drink similar to gin and tonic were sublime. My dinner companion pointed out that the mung bean pasta at the start, as well as the bamboo dish, had strong Asian fusion influences. The potato with spice powders and artichoke with mousse dishes were unlike anything I've ever had and seemed completely original. Read moreThe quality of the food, the service and the atmosphere are all excellent. I highly suggest the seven course tasting menu with all seven wines. The pairings are exceptional and the wineries they use are incredibly interesting. Atmosphere is interesting, with a mixture of classic rock and jazz for ambiance.
The restaurant is very small, and has an open kitchen with a mixed front and back of the house. The chef brings and describes each plate personally and you can feel the dedication in his cooking. Service is impeccable and the daughter of the cook pairs the wines exceptionally well--the pairings are better than two starred Michelin starred restaurants I have been to.
Each dish is interesting, with wonderful plating that could be considered works of art. The balance is perfect without wine, but with the added wine pairings it goes one step further and are easily masterpieces. While a few of these dishes were incredible models to aspire to, each had their merits and were excellent. The use of techniques to bring each element to the forefront was ingenious.
