I rolled into Sorbillo at the midday rush—not for some curated Instagram moment, but to eat pizza like people do, in a hurry and on their feet.

The Good Stuff: The crust had that telltale Neapolitan bite—charred just enough to whisper of fire but soft as a pillow in the middle. The cornicione (edge) had a slight chew, with those blobs of black that taste of smoke and forgotten secrets. The tomato sauce, bright and unpretentious, cut through the dough like a whisper of home. Mozzarella was soft and milky, not the kind that smacks you in the face with personality, but that’s okay—it got out of the way and let the pie be itself.

Where It Stumbles: This isn’t a pizza to break your heart. The portions are modest—you’ll finish it, shrug a little, and think “passo dopo?” They stretch the service thin. I watched every table hit the “hangry” zone, waiting close to half an hour for a single pie. And at €12–14 a pop, sure, the ingredients feel decent—but at this point in Turin, I’m looking for a little attitude with my dough. I’m not asking for fireworks. Just something that punches back.

Atmosphere & Feel: White tile, open kitchen, frantic pizzaioli tossing dough like pros, a grind of commerce and craft. It feels alive. But it doesn’t feel special. Like a reliable friend who shows up for lunch—not one you’ll call at midnight when the world is collapsing.

Final Take: This Sorbillo is solid—safe, honest, mostly satisfying. But in a city dripping with passion and quality pizza, it doesn’t burn a mark on your soul. At first about 19:00 as I was walking pass, it was empty. Stop to read the review and saw a few negatives and positive. About 10 min later as I was taking photos I noticed more people entered. I decided to try translate the menu (no success with google) but I went inside. They kindly sat me down and I looked and could decipher some of the words. I ordered a salami calzoni and a coke. The order arrived quickly but I was shocked at the size. It was big. I managed to eat about half. Now unless you're into lots of cheese, and I mean lots, then it shouldn't affect your tummy. The salami was sliced into slivers and heated up. This isn't a calzone I'm used to back home. I ordered a dessert, tiramisu, it had more cream than pastry. The coffee they served was a shot glass of cappuccino. Overall its more of a pizza place, and expect to be hungry or split the ordper. Once finished, you cash out near the front door. More about this at other places later. The staff was very friendly and understood some english. I think the price I paid was fair but I really wish I was 2 ppl...

You can't go wrong with a "great classic" like a Bufala or a "simple" Margherita (the standard by which all good pizzerias should be measured as you can't "cheat your way around" simple ingredients and recipes), or you can opt for something more "gourmet" with selected ingredients of proven origin and otherwise hard to find (like yellow tomatoes) and even try a pizza dedicated to "his majesty" Massimo Bottura (Italy's most celebrated chef). The place is not big and you'll have better lunch at lunch rather than dinner to find a table right away without having to wait in line. Inside the decor is whimsical and very colorful, fun, but not gaudy. And when the pizza comes you only look...

Iniciamos la degustación con la pizza que considero que todo el mundo debe pedir en una pizzería napolitana, la Pizza Margherita. Una pizza cocinada al estilo tradicional de pizza napolitana, con el cornicione (borde de la pizza) no excesivamente elevado. Pese a ello, la masa estaba increíble, perfectamente cocinada y con esa textura elástica que tanto me encanta. De la misma manera, el pomodoro me gustó mucho y contaba con una potencia apreciable y el fiordilatte es de los mejores que he degustado. No obstante, como puntos negativos debo destacar la escasa cantidad de albahaca y que la cantidad de aceite de oliva era ligeramente excesiva. Por lo que, siendo el mejor plato de la comida y una de las mejores pizzas que he degustado, no es la mejor pizza margherita que he probado y de ahí que considere que la puntuación acorde es de... La otra variedad de pizza que degustamos fue la Pizza Cosacca, la cual llevaba Pomodoro di Agricoltura Biologica, Parmigiano Reggiano DOP “Malandrone 1477”, aceite de oliva y albahaca. Una pizza que, como no puede ser de otra manera, contaba con una masa idéntica a la anterior. Por lo que puedo volver a decir que la masa era sublime y que es de las mejores que yo he degustado de pizzas napolitanas, ya que no estaba nada dura y contaba con ese punto elástico, pero no costaba que se separara. Asimismo, el pomodoro era el mismo que en la pizza napolitana y también fue de mi agrado, pero en este caso el Parmigiano Reggiano DOP pasó bastante inadvertido inadvertido. Por último comentaros que la cantidad de albahaca también fue excesivamente escasa y que, siendo una buena pizza (sobre todo por la masa), me gustó menos que la margherita y de ahí que le otorgue una puntuación de... Para finalizar la comida optamos por probar uno de los postres más recomendados, el Tortino al Cioccolato. Una especie de Coulant de chocolate, calentado al momento, y que contaba con una textura casi líquida en el interior. El chocolate era bastante intenso y contrastaba con el sabor aireado y ligero de la nata. No es el mejor coulant que he degustado, ni el mejor postre de mi vida, pero en líneas generales me pareció correcto y de ahí que le vaya a dar una puntuación de... Por último, si queréis saber la puntuación de cada plato y una valoración final con su respectiva puntuación, os animo a que os paséis por mi blog de gastronomía y viajes.

Iniciamos la degustación con la pizza que considero que todo el mundo debe pedir en una pizzería napolitana, la Pizza Margherita.
