Spoiler alert! We had the best time in Sushi Hayata!
I'm sad I didn't get the chef's name and everyone else. Their team consisted of four chefs at the sushi station, 3 gorgeous women at receiving.
We came in just slightly hungry because of all the vending mac drinks we consumed, so we decided to walk aro oir hotel neighborhood and along the way we pictured to eat some light meal with sushi to end our evening.
We tried to express to the chef and receptionist that we are entrust them to feed their recommendations. They could not get it at first, but in the end they seemed to enjoy feeding us.
We had sushi assortment, I'm not sure what they were exa but I will try my best to provide caption the sushi names what I remember.
My boyfriend ordered a nice sweet fruity plum wine with soda and I made a mistake of ordering a strong potato shochu on the rocks "kurokirishima" and they were all laughing at my reaction after taking a small sip. In the end my boyfriend and I exchanged. Aside from that, he ordered oolong tea and unexpectedly it was iced.
For the main events!!! The special sushi selections. I want to think they made it very special only for us.
We ordered chef recommended sushi assortment, and the others were just "omakase"!!! 🥰😍 He told us which one to dip and not dip in the soy sauce. Mostly the ones he made separately from the sushi assortment don't need soy sauce dipping.
We both love sushi and we didn't know that fresh Japanese sushi should be tasting this good!!! Every bite and texture contributes to the flavor and whole experience.
We were recommended to eat white fish or the ones with "lighter flavor" first and the rest is fine to eat next, eat the fatty tuna and grilled mackerel last as they had "heavier flavor". We ate the tamago at the very last part.
TO SUMMARIZE EVERYTHING WAS SO GOOD, PERFECT EXPERIENCE FOR US, BEST PLOT TWIST AND SURPRISE DINNER.
Squid "ika" sushi was a combination of crunchy and chewy texture that has bland but tasty flavor at the same time.
Sweet shrimp "ama ebi" sushi is so fresh and naturally sweet. An easy favorite!
All of tuna "maguro" sushi were excellent. It's our first time to try legitimate very fatty "otoro" sushi and my gosh they were melting in the mouth but without the "oily" feel of other fatty foods.
Grilled mackerel "saba shioyaki" was exceptional for my boyfriend and I found it the same too. Unlike other grilled fish sushi I've had before.
Sea urchin "uni" sushi is something I was unsure of because I'm not a big fan of sea urchin, which some friends and family are and I never understood why but after this one I'm converted! It has a mushy texture as expected but the flavor was very fresh, rich and creamy!
ALL OF THEM had balanced flavor, SUPER FRESH, no need for extra wasabi because it's already just perfectly incorporated in the sushi. The pickled ginger was also just right, strong but not overpowering and not chemical-like taste.

Read moreIt was our last night in Osaka. We were tired from a full day of last-minute shopping and just wanted a great meal near the hotel. A quick search brought us to this intimate sushi house with counter seating, known for fresh sashimi, classic rolls, and tempura.
At the door, we were handed a small English sign explaining a ¥500 table charge per person, which came with a small appetizer. It caught us off guard. We hadn’t seen this in other Japanese restaurants, but coming from Canada, where tipping is standard, it didn’t feel like a big deal. If the food was good, it would be worth it.
Inside was quiet and focused. Four seasoned sushi chefs stood behind the counter, each one calm, precise, and in full command of their craft. The place was filled with locals. Always a good sign. Thankfully, the menu had English translations, so ordering was easy.
I chose a trio of tuna cuts, an assorted sushi set with fatty tuna and eel, and a cold Asahi. The chef in front of us was friendly. When I asked if I could film, he smiled and nodded. He got the gist. Watching him slice and shape the sushi was mesmerizing. Clean cuts. Confident hands. Not a single wasted move.
And the sushi? Fresh. Balanced. Perfectly seasoned. Every piece was cut and shaped and assembled with care. Nothing showy. Just skill and balance.
Our total came to ¥10,410 for two, including the ¥1,000 table charge. For the quality and experience, it felt like a steal.

The sushi was delicious and so very fresh. On this visit, I had the standard assortment (which comes with Miso soup and, of course, tea). In addition I ordered two pieces of nigiri "Omakase" (chef's choice) and an umeshu rocks (a light and sweet plum wine that is perfect for lunch). The two nigiri chef picked out for me today were Uni (sea urchin) which was buttery and rich - also Anago which is a different kind of eel than unagi and is served lightly torched so it has a smokey flavor - absolutely oishi (delicious).
The sushi has Wasabi added by the chef, so it is served only with sliced pickled ginger. Smoking is permitted, though nobody was smoking while I was there - the place gets quite crowded for lunch. English menu is available, though the very friendly staff speaks only Japanese.
A word to westerners who may be experiencing their first Japanese sushi - you will notice that most Japanese pick up their nigiri and turn it fish side down when dipping in soy sauce.
