it's pretty okay!
we had the shio wonton special and the shoyu wonton special (+ extra fat), and both were quite alright
bonus points for making the noodles in store, but minus points for the noodles being a little soft despite having ordered them extra al dente
the shio soup is a bit salty on its own but works well with the noodles. i'm not saying it doesn't have depth, but it's a bit too subtle and it doesn't wow
the star of the toppings was surprisingly the egg: despite it not having been marinated, it was really good for being jammy and having a rich flavour. the shrimp wonton filling was a little too pasty and gummy, though the flavour was fine. the meats were all very tender.
the chili oil for the wontons was also surprisingly flavorful and spicy (for Japanese standards), and the black vinegar tasted good
all in all, it's pretty okay and there's a lot of things done competently, though none of the major players in the bowl really wow me

The broth is something else—rich, layered, and packed with flavor from things like oysters, dried fish, kelp, and chicken. It’s the kind of broth you want to take your time with, not just slurp down. The pork shoulder char siu and the slow-cooked chicken are both super tasty and tender, and the wontons? Incredible. They've got this spicy oil that kicks things up in the best way.
Everything in the bowl has its own flavor, but it all comes together so nicely. If you love ramen, this...

The broth here has an elegant and complex flavor that deserves to be savored slowly rather than gulped down. The pork shoulder char siu and the low-temperature cooked chicken are likely carefully selected too, both excellent in quality and taste. The wontons make a strong impression, with their tender, bouncy filling and spicy oil – a perfect match! In just a small bowl of ramen, there’s a concentration of flavors from oysters, various dried fish, kelp, and chicken, plus a delicious impact from assorted meats. It’s an experience not...
