If you want an exclusive sushi dining experience away from the masses, look no further than Sushi Hajime in Shibuya.

ATMOSPHERE: Located in the basement of a very nondescript building, don’t try to enter earlier than your reservation time like we did. Wait for the dark stairway, stoop lamp and biz sign to light up and welcome you in.

Clean lines, modern design and no background music. Intimacy was at its finest as eight of us sat at the 3-sided counter with the chef’s counter at the helm.

FOOD: Chawanmushi Chilled custard with savory tomato soup atop. Well-balanced creaminess and acidity.

Hirame Sashimi Buttery and firm with a plum sauce & shiso flower. Delicate flavors.

Unagi Grilled eel and side of wakame. Texture and flavor was similar to a cooked butterfish. Delish.

Nikogori Fish Jello anyone? Chilled gelatin cubes with a mix of savory and sweet notes, topped with cooked tuna bits. Surprisingly pleasing to the palate.

Ika Sushi Seasoned with salt & sudachi (Japanese lime). The rice was mixed with fresh wasabi and adzuki beans.

Hirame Sushi Simply raw flounder, brushed with shoyu atop rice.

Ahi Belly Sushi I honestly couldn’t tell the difference between the belly and body as they’re both tender!

Kohada Gizzard shad fish, a first for me, with the skin still on and artistically scored by hand. The skin was so soft that it tasted skinless. Amazing.

Takabe Sushi I’ve never had raw butterfish before and after this, I’d still prefer it cooked as it tasted like any other soft meat fish.

Awabi Steamed abalone from Chiba, over a creamy liver, canola oil and egg sauce. Wow. Don’t use up all the sauce as the next dish goes with the leftover.

Rice Ball Topped with a sesame seed mix, eat it with sauce from abalone.

Hanu Filet of a flaky white fish that’s difficult to debone, it was seaweed crusted & fried. Grilled Piman peppers that tasted like the shishito variety came on the side.

Ebi Sushi Minced raw shrimp. Nope, couldn’t stomach this one.

Ahi Sushi Your everyday variety with Yuzu (citrus) rice.

Uni Sushi Not a fan of sea urchin.

Tamago (dessert) Not sushi but a sponge cake topped with egg, baked low & slow for 2 hours.

Miso Soup Made with shrimp dashi, I appreciated the unique flavor or this recipe.

Matcha Mousse Fluffy & light without any overpowering tea flavor.

SERVICE: All of the staff were utmost professional and attentive. Chef Hiroshi and his assistant were awesome. They both took excellent care of our party, further educating the culinary students in our group with their master skills. Our farewell was so memorable as the entire staff came outside to see us off in our taxis.

JR渋谷駅から明治通りを恵比寿方面に歩くこと5分ほど。新南口からストリームを超えて行くと便利です。明治通り沿いのビルの地下にお店があります。看板は白木の細板が並ぶ上品な壁に店名のみがあります。店内はあると中央にぐるっと白木のカウンターが回っており、10席が用意されています。奥に個室もあるようです。上着などはお店の方が預かってかけておいてくださいます。

担当の職人さんが挨拶をしてくださり、おまかせコース1,8000円が始まります。目の前でお寿司を握り、輪島塗りの寿司台に置いてくださいます。 お寿司によっては直接手に渡してくださったり。すぐ前でお客様のために専属で作ってくださるのは大変贅沢なことですね。

先付 北海道産の白子 上品にお出汁と柚子で甘味と香りでいただきます。白子の濃厚なとろみと甘みがお出汁ととても合って美味しい。白子の新鮮さも感じられる先付でした。

鮑のお造り 醤油よりもマイルドなお酒を煮詰めて使った特別な黄金色のタレにつけていただきました。付けたれは鰹と昆布の出汁と酒を煮詰め、塩味は梅で味付けとのこと。鮑の新鮮な弾力と、旨味と甘みの絶妙なタレが絡み、食べたことのない美味しいお造りになりました。こういう食べ方は初めてで、職人さんの味への造詣の深さには感心いたしますね。

これから蒸し上げるという生きた毛蟹が登場。まだ動いている生きた毛蟹を目の前で初めて拝見しました!

ウニ ウニの甘みとまったりと濃厚な旨味が特別な赤酢で美味しいシャリとともに握られています。人を一気に幸せにするこの美味しさはウニならではでしょうか。

戻り鰹のお造り 鰹は燻製にし、上にはネギを当たり鉢でよく当たり、ペースト状にしたものをのせています。香りがよく広がる工夫です。味付けはシンプルに少しお醤油をつけています。鰹を美味しくいただくのは通常少し難しいものですが、非常に美味しくいただけました。

焼物 秋鮭の西京漬 上品な味付けの西京漬の焼き物です。石川小芋をきぬかつぎにしたものが添えられていました。見た目もお味も上品な焼き物でした。

アオリイカ ねっとりと歯応えも適度にある新鮮なイカは、イカ墨をお塩に混ぜてローストしたものを少し上にのせています。程よい塩味とイカ墨の旨味が加わる極上の握りです。

蒸し蟹 先ほど生きていた蟹が蒸し上がり登場。職人さんが綺麗に身を出してくださり、手渡しでそのままいただきます。身が大きくふっくらとして自然の旨みと塩味で上品なお味に。そのままで美味しい目利きの選ぶ蟹でした。

春子鯛 鯛の子ども、春子で、2貫で1匹という小さな鯛。身が柔らかいのが特徴とか。新鮮でふっくらです。中に柚の香りを忍ばせて握っています。美味しい上品な赤酢のシャリとも好相性です。大変、美味。

太刀魚 綺麗な長い身から職人さんが上手に皮を包丁で取るのを目の前で見ながら、ネタになるまでを観察。目の前にうっすらと残る皮目が光る美しいお寿司が置かれます。味は生姜とともにさっぱりとした白身の上品なお味でした。

赤身 海藻から作った藻塩でシンプルにいただく活きの良い赤身。赤身をお塩でいただくことが珍しい。ふっくらとした身に切れ目が入り、シャリにしっとりとたれてきれいです。味は間違いない美味しさです。

イクラの茶碗蒸し 黄金に輝くイクラが暖かい茶碗蒸しにたっぷりと盛られています。イクラの優しい塩見が茶碗蒸しの卵と良く合っています。暖かいものが出てくることが珍しいのですが、季節を意識した計らいでした。

Well-balanced creaminess and acidity. Hirame Sashimi Buttery and firm with a plum sauce & shiso flower. Delicate flavors. Unagi Grilled eel and side of wakame. Texture and flavor was similar to a cooked butterfish. Delish. Nikogori Fish Jello anyone? Chilled gelatin cubes with a mix of savory and sweet notes, topped with cooked tuna bits. Surprisingly pleasing to the palate. Ika Sushi Seasoned with salt & sudachi (Japanese lime). The rice was mixed with fresh wasabi and adzuki beans. Hirame Sushi Simply raw flounder, brushed with shoyu atop rice. Ahi Belly Sushi I honestly couldn’t tell the difference between the belly and body as they’re both tender! Kohada Gizzard shad fish, a first for me, with the skin still on and artistically scored by hand. The skin was so soft that it tasted skinless. Amazing. Takabe Sushi I’ve never had raw butterfish before and after this, I’d still prefer it cooked as it tasted like any other soft meat fish. Awabi Steamed abalone from Chiba, over a creamy liver, canola oil and egg sauce. Wow. Don’t use up all the sauce as the next dish goes with the leftover. Rice Ball Topped with a sesame seed mix, eat it with sauce from abalone. Hanu Filet of a flaky white fish that’s difficult to debone, it was seaweed crusted & fried. Grilled Piman peppers that tasted like the shishito variety came on the side. Ebi Sushi Minced raw shrimp. Nope, couldn’t stomach this one. Ahi Sushi Your everyday variety with Yuzu (citrus) rice. Uni Sushi Not a fan of sea urchin. Tamago (dessert) Not sushi but a sponge cake topped with egg, baked low & slow for 2 hours. Miso Soup Made with shrimp dashi, I appreciated the unique flavor or this recipe. Matcha Mousse Fluffy & light without any overpowering tea flavor. SERVICE: All of the staff were utmost professional and attentive. Chef Hiroshi and his assistant were awesome. They both took excellent care of our party, further educating the culinary students in our group with their master skills. Our farewell was so memorable as the entire staff came outside to see us off in our taxis. OVERALL: Highly recommended.
