This restaurant is fantastic, I would recommend it to anyone that appreciates fine dining. The best Omakase (chef selection menu) that my partner and I have ever had. Serving sizes are small of course, but by the end you’ll definitely feel full! The head chef was so friendly and accommodating, and spoke to us about many of the dishes as we ate. It was interesting to hear about the production methods, and wonderful to know that many of the ingredients are fresh local produce or created in-house.
A very lovely waitress was helping with wine selections and drinks - so friendly and definitely has a great understanding of wines and how to pair them with particular dishes.
The staff all spoke great English - if that’s a concern for any other travelers. In fact being in Tinc Gana made us feel like we were back home, and not in Tokyo at all! It was beautiful atmosphere and decor, reminded me a lot of spaces I’ve been to across Europe.
I had mentioned that we were traveling for our first wedding anniversary, so the chefs added a beautiful touch to one of our dessert dishes - ‘happy anniversary’ written in cursive with chocolate! Such a thoughtful gesture, and a little bit corny which my partner and I loved. I was amazed at how warm and caring the staff were throughout the night. I’ve been to plenty of other fine dining spaces that are colder or more ‘professional’ versus friendly with customers. The staff here seem to value customers in a really positive way, and understand that your experience is just as important as your food.
I didn’t take photos throughout the meal because I was too busy enjoying the food and atmosphere… But if you’re in Tokyo then Tinc Gana should definitely be on...

During the pandemic, he opened Gracia, which is my favorite Spanish restaurant in Tokyo, and Tinc Gana is his second restaurant in the Ichigaya neighborhood of the city.
We got to be one of the first customers at Tinc Gana, as we got reservations during the first week of their opening. We went for the shorter lunch course, which is only 5,500 yen! We loved everything on the tasting menu, especially the squid with early grey tart, pork and the dessert. Never had pork that was this tender before and their smoked milk ice cream with blueberry and rose sauce was delicious. We also enjoyed their signature Jerome cava.
Between Gracia and Tinc Gana, I don't know which one is better and I'm sure we'll have a difficult time picking one over the other the next time we're craving Spanish...

But all the food and the service was great. I am sure it’s because they just open less than a year that it is still underrated. Some of the combination of including Japanese culture was interesting. Especially the paeria onigiri. And the dessert was my favorite part, after a coconut pudding sort of thing, then we get to taste the cheese cake, and then pomegranate ice candy and the strawberries, caramel. The cheese cake can be purchased by anyone in-front of the restaurant. I really think it is worth to try. At the end I was surprised on how much food we tasted for that much amount of money. I think it is worth every penny. Looking forward to come back to taste it again some other time. P.s I forgot to take a picture...
