The service - I received was top notch by my waiter, and he was very nice and patient. I did have to ask for a side of ginger, and for forks though since they did not come out automatically. We don't eat wasabi, but I assume I would have had to ask for that too.
Atmosphere - we sat in the back to the left, which turned out to be a good idea because we were closest to the air conditioner that seemed to blow "cool" air, but I could see the other patrons fanning themselves, so we were lucky.
Now on to the food - there are two menu's at this establishment. I believe one menu offers the 2 for 1 specials, and the other is the all you can eat sushi roll menu, which I've attached a photo of, and that's the menu we ordered from.
Everyone on here who complained about the filling of the rolls, and how you're pretty much just eating rice - is 100% correct. Despite their postings, I was still surprised by how little they put in their rolls. If you like just eating loads of rice with a dab of filling then you've found the right place. When I say the fillings were tiny, I do mean miniscule.
*Bonus - I ordered one lemonade for the table (there were only two of us) and it was large enough for the both of us, but it tasted more like warm water. It cost 50 pesos. I might have gotten a Dr. Pepper instead if I had known. Also, for the first order, each person at the table can order a maximum of two dishes. We got a total of four dishes to begin, and that was about all we could muster. If we could have eaten more, my waiter explained it then becomes one plate per person. If you don't finish what's on your plate they will charge you an additional 100 pesos, so we didn't want to take the chance and we were stuffed with rice anyway so we didn't get a chance to try the other rolls.
Would I go back there again? Probably not. It's not worth the schlep from the Alfredo V. Bonfil area of Cancun, nor the price I paid for what I got. Maybe you can try to be proactive and tell the staff before ordering if the fillings are too little you won't pay. That would put the onus on them to either make it decent the first time or risk making a measly roll that the patrons would walk out on. If a table of four each ordered two dishes, that would be eight rolls on the table. If you warned them you'd walk out if they were not made like a normal roll should be, they would risk losing out on a lot of rice on those dishes.

Lo más desconcertante no es solo la escasez, sino el tiempo de reposición: hasta 30 minutos para reabastecer la barra. Así, lo que debería ser un festín se convierte en una cacería donde los más rápidos y pacientes triunfan, mientras el resto contempla su mesa vacía con resignación.
Y si bien el sushi en sí es pasable, sin sorpresas ni grandeza, el verdadero problema radica en la gestión del servicio. Un buffet que no alimenta deja de ser un buffet y se convierte en una broma de mal gusto.
En resumen, Hattori Sushi Bar no es un restaurante, es un experimento sociológico: una prueba de cuánto tiempo está dispuesta a esperar una persona por un trozo de sushi mediocre.
