We perused s number of options for mid-priced Italian food before settling on Cancini with the promise of fresh pasta made in-house and large or small pizzas from a wood fired oven and several authentic ingredients listed. Still not inexpensive, the food was certainly a letdown. It frankly had little to do with Italian cooking and flavours. What they got right is rich and ripe tomato-based sauces. The pasta, both the bucatini and lasagne was woefully overcooked. One needed a microscope to find the Calabrian salami promised in the bucatini (confusingly labelled spaghetti), which otherwise was drowning in sauce. The bechamel, if indeed present and flavoured, was lost in the lasagne which lacked flavour overall. The pizza dough had the opposite problem in being distinctly undercooked, leaving you with a doughy flavour in your mouth and an unpleasant texture. Did we have worse Italian food across the world? Most certainly. Could it be better: well, yes, very easily, and that's what made it so disappointing. It's seemingly a small task to adjust the recipes to get what they do have already as right and as flavourful as possible. So why not do it? The very attentive and informal waiter seemed to agree with me in that one doesn't quite pay enough here to expect excellent quality cooling. Odd, because I doubt it would take much more time and effort and it wouldn't really take different ingredients either, perhaps just adjusted balances. Reason for 3.5* is due to the bad service we experienced from our server Axel, who served us a pizza with prosciutto on it even though we made it clear we are vegetarians and requested the pizza sin carne which he acknowledged and repeated back to us. (No language barrier). Upon receiving the pizza and explaining to Axel we had ordered without prosciutto, he took the pizza to another counter and simply plucked the prosciutto off before handing it back to us. This was totally unacceptable and really put us off our food. We spoke to another staff member Karen, who quickly remedied the situation and asked the kitchen to make us a new pizza. Axel’s service was on-off for the rest of the evening (almost as if he was avoiding us). At the time of paying the bill, axel asked for a tip. We agreed 5% despite the issues we’d had; Axel still put in 10%. Karen did later offer of a reimbursement but we let it go. Hopefully someone from the restaurant will read this review and offer...

Everyone was pleasantly suprised and pleased with their cocktails, non-alcoholic beverages and appetizers. The lemon sorbet in my drink was so yummy I found myself at Nieve de Ollo for dessert the next day. The truffle potatoes were prepared, dressed and plated perfectly. I was grateful for the array of oils and spices at the table because I found the pepperoni pizza to be too bland for my taste, but the diavolo was packed with the flavor I was looking for.
