Recently returned. Very good food. One tiny complaint, rice was not sticky enough for sushi rice. It fell apart.
The quality of food at Hikaru is good, and the menu extensive and mostly authentic. We did have some complaints the last visit. On entering, there was no welcome "Irasshaimase", no polite bowing, mostly we were ignored. We were given a phone with a QR code for a menu, and nothing was said. There was water all over the floor behind us from the air conditioning which no one had mopped up, they proceeded to mop when I said it could cause someone to slip. The ambient music was modern pop, not soft background music or anything related to the Japanese atmosphere which is what it should be for a restaurant like Hikaru. Our waitress needed more training to listen to her guests concerns and not try to prove the customer was wrong. My salmon was to be cooked to medium and was raw inside, however she tried to tell me that is what medium is.... My friend's noodles were to come with pork, there was no pork - it was forgotten, but she tried to tell us there was pork in the dish it is just cut so small maybe my friend didn't notice it. When we did not accept her explanations, she went to the other staff about it because she was not happy. They gave us a discount to cover the issues however, I have been a client and have going to Hikaru since it opened and have not had issues like that before. Read moreThis is a very small restaurant but with extremely tasteful food. The best traditional restaurant you will ever find in Panama.
Be aware to make a reservation, it may be difficult to find a free table depending on day/time. There is a bar you can sit if going alone or in a small group. The place is not suitable for large groups.
As the entree I recommend the "Gyoza" or the "Tori no Karaage". Also as main course the "Shimesaba aburi", the "Butano kakuni" and "Ebi no tempura".
Sashimis are very fresh and sushis are made with extreme care. Do not expect to see mangos or cream cheese within them, as I mentioned this is a very traditional Japanese restaurant.
They offer a small assortment of Japanese beer and sake, as well as local beer.

Read moreI would rate this restaurant average at best. The nigiri was the best part of our meal - the fish is good quality but not amazing.
We ordered two bottles of water and had to ask for them again halfway through the meal as they never brought them. My sparkling water was completely flat and at the end of the meal they accidentally charged us $17.50 per bottle - I’m glad I caught the mistake and flagged it!
I would not recommend the maki. They use imitation crab meat in their California roll and the ninja roll is extremely over sauced, it might have just been the night but ours was very fishy.
I know we are spoiled for amazing Japanese food in California and it’s probably silly to look for good Japanese in Panama but I had high hopes based on the other reviews!
